Eggs, ground beef, and onions (or shallots, scallions, etc.) is a superb combination. I like onions slightly more raw, so I make the eggs & beef, then put them atop the onion choice.

essentially, it's an omellete with a lot of ground beef. I am diabetic and so I can't eat bread, but i love cheeseburgers, so what I do is make a cheeseburger omellete. lol. Just add ground beef to an omellete and add cheese and a little ketchup! the ketchup isn't as bad as you may think in the omellete b/c it goes so well with the beef. :)
