Shortcrust Pastry Double Batch:
2.2 lbs (1,000 grams) all-purpose flour
17.6 oz (500 grams) unsalted butter
4 tsp (20 grams) salt
4 large eggs
1/2 cup (120 ml) ice-cold water
Shortcrust Pastry Regular Batch:
1.1 lbs (500 grams) all-purpose flour
8.8 oz (250 grams) unsalted butter
2 tsp (10 grams) salt
2 large eggs
1/4 cup (60 ml) ice cold water
Chicken pot pie filling:
1 whole roasted chicken cut into 1-inch cubes
6 tbsp unsalted butter
1/3 cup +1tbsp all-purpose flour
1 yellow onion large dice
4 medium carrots cut into oblique shapes
2 1/2 cups chicken stock
1/2 cup heavy cream
2 tsp marmite
1 tbsp Dijon mustard
2 tsp kosher salt
1 tsp black pepper
1 cup frozen peas
2 tsp finely chopped fresh rosemary
2 tsp finely chopped fresh sage
5 sprigs of stripped thyme

A real pot pie has a bottom crust. Lay the bottom crust in the pie plate, then blind bake it. When the crust has cooled, proceed with the recipe. Easy. 🤗

Awesome recipe! For those following along at home, here are some notes I had: 1. Following the filling recipe in the description, we were able to make 4 pies (only wanted 2...). Stretching the dough on top a little thinner made it work tho. We doubled the filling because it looked like that part was for one pie, but idk ymmv 2. Put a pan under your pie for baking (or don't overfill it). Mine leaked and now I will be cleaning the oven. 3. Tasted fine without Marmite, added some extra better-than-bouillon but idk how marmite tastes, but it's hard to find here. 4. Worcestershire sauce goes hard with this (especially if you go too light on the seasoning) 5. Don't forget the pastry dough needs salt! The pastry dough turned out amazing. Definitely worth making it and following the recipe.

Dough recipe is absolutely on point. I learned this from my mother, who learned it from her grandmother, etc... This is how you make pie crust. Hands down. BEST!

As a Brit, I believe a pie should have a pastry bottom, sides and top. However, I must say your pastry looks wonderful, just wish there was more on it.

I'm a firm believer that a pie should have a pastry bottom as well. In Britain pies tend to only have a pastry top.

I like a crust on the bottom too. Crust is my favorite part. Maybe use a store bought puff pastry on the bottom, par bake it and continue with the rest as you did. Your crust looks amazing! 👍🏼👍🏼

There is a paste bullion called Better Than Bullion. I am IN LOVE with that stuff. DONT eat it straight from the jar , the salt will kick ya hard. But it makes THE BEST gravies and sauces! I am horrible at gravies with flour , so i use corn starch and this bullion, mix it with water first to dissolve it .

Try adding just a bit of chicken Better Than Bouillon to canned chicken noodle soup and it makes it taste homemade. Simple way to really upgrade can soup.

Freeze your butter. Then use a cheese grater to make the chucks of butter. This keeps them very cold and they can be mixed quickly through the flour. Ta Da!

Today is the day. I watched this video around 20x during the last 2 weeks. I cook a lot but never dough. Watching the dough portion over and over again. The flour and butter mixture is now been made and sitting in the fridge for 10 more minutes before I try to add the egg and water mixture. Wish me luck!

I was fortunate enough to be in the kitchen with my great-grandmother and my grandmother and the only thing that they did different on this recipe, including the fancy topping was they had a base in the dish of dough and it was maybe a little thicker dish but it did have the top but you poured the ingredients right in the dish without actually having a pie bottom. That made an incredible difference.

I've become addicted to savory pies and pasties. I have lots of dietary restrictions, and find that I can make a real treat for myself that is still legal by making simple adjustments to recipes. I have "The Pie Room", which is excellent. Erin Jeanne McDowell's "Savory Baking" is also excellent. Have not made a chicken pot pie yet (lots of steak and mushroom pies and hand pies, though). Will try this soon. Love your channel.

Alton Brown recommends using the bench scraper to fold it in 1/3s once you press the dough mss into. Pile and press it it ft. Usually about 5 fold should bring it together

My go to in the winter is make my best pot of chicken soup and have it that night. And the next night make chicken pot pie with the left over soup. Just thicken it and add peas and what ever I have laying around. And yes, I'm going have to try your secret ingredients and the fresh herb next time. And I agree with making pie crust from scratch. It's easy and makes all the difference in the world. I just use the crust recipe in the jacket of the Good Housekeeping Cookbook. Although I'm going to also try your crust. I looks killer. Cheers

Your videos hit a sweet spot with real meals using fresh ingredients. I'm a caretaker for several family member with little time but a desire to serve healthy meals. You show how to divide recipes into prep and cook, prep rosemary salt and section turkey days ahead at night, combine as needed. BTW, might be heresy, I microwave chopped onion and carrots before browning to save time and attention by softening them, then fry for Maillard reaction.

In the Netherlands we call this dough 'kort boter deeg' normally its used for cookies and is not savoury at all, the method you use is spot on btw. Certainly gonna try this some time in the holidays ❤

Taste the Pea-ness! Back in my restaurant days, we'd make these in little 6 inch ramekins for individual servings, works great for home as well, Can customize the filling for each little pie if you have picky eaters in the house.

The left over dough is perfect for cookies, just cut out a shape you like and sprinkle some caster sugar on and bake for like 12 mins at 200°c

Quite often the "pungent pea-ness" will add a wonderful note of blue vein cheese which I think is a great addition to any moist bird. The crust overhang issue... pfft, purely looks and didn't seem to affect the short crust pastry flavour,, however thank you for showing, it just boosts your credibility. Great recipe, video and presentation, thank you 🤩

My pot pie is never dry. Use my granny's flake proof ingredient.. white vinegar. My filling last yr was the best. Used black silky chicken in the multiple cooker to obtain the tastiest broth 😋.. I have to make a double crust... This recipe will top my pot-pie this yr 2024!

If your chicken is raw, another idea is to boil in the stock the parts of the chicken you're using along with the bones. It fortifies the stock while making the chicken very tender. You'll probably have a lot of leftover stock in the end but I don't see that as a problem

Love the wine, I also add wine to my chicken pot pie. A few dashes of poultry seasoning, I love that stuff. I put it in my dumplings as well. Not too much, it's intense.

I like to put a stick of butter in the freezer ice tray for about 20 minutes and then grate it into the flour. Less hand mixing and the dough stays nice and cold.

I don't know why I don't see chefs advising to put the flour in the refrigerator for flaky crusts. It makes things fool proof. You can even mix the dough in a food processor with no fear of over heating; done in seconds.

I'm of the ilk that it is not a chicken pot pie without a bottom crust, which, IMO, is the best part since it soaks up all the flavor of the filling and when parbaked, remains just flaky enough. So, I'm making your killer chicken pot pie, but with a bottom crust! :)

A pot pie doesn’t have pastry on the bottom, that is just a pie, and a tart has pastry on the bottom with filling but no top. So if you call a pie with a top and bottom a pot pie, could you please tell me what do you call a pie with just pastry on the top.??

Man, I *love* making chicken (and mushroom) pie and it's been well over a year since I last made one, I'm just realizing. Next weekend, I'll be making one again!

I'm obsessed with chicken pot pie. The crust recipe is great and the filling looks amazing. I will make this as a soup since I need to be low-carb which sucks. Thank you so much! P.S I hate celery too.

Holy crap -I thought you had it but now - I am crushed. Anyone who does not put a bottom crust on their pot pie is a blasphemer. The soft dumpling like bottom crust balanced against the crispier top crust is INCREDIBLE. Have you no appreciation for nostalgia? Put a bottom crust on and flip the damn pot pie over so you dig into the bottom crust on the way to the filling. This makes me sad for all pot pies of the world. Thatdudecancookeverythingbutpotpie. I'm crushed. I have to go and revisit all the stuff of yours that I make. I'll try to choke it all down but it may be difficult as I think of the missing bottom crust. I want to see it on a milk carton.
