I found and shared this channel with a good friend of mine, who through the comings and goings of life, I fell out of touch with for a couple years. Hit him up when Daddy Jack passed away and it kind of sparked our relationship again. That friend suddenly passed 2 years ago and these videos always remind me of him and what we shared. R.I.P. Daddy Jack and Daniel, one of the best friends anyone could have.

There’s something beautiful and comforting about these videos. They aren’t filmed perfectly, they aren’t edited really at all, and Jack does everything by feel. Yes vary sad, who'd have thought making food with a lot of fat and cream making you morbidly obese would be bad for your health? Oh and the french traditionally thicken their sauces, especially chicken stock or white sauces, with a beurre marnier not bloody egg and potatoes.

Coming back to these vids really are like comfort food for the soul. Maybe especially the ones where he does mom's recipes and reminisces. Such warmth and humor, with his sentimental nature on full display, and also just his kind of hip old school almost rustic technique all the while, in keeping with the soulfulness which seemed elemental to him. He had a great sense of 'home' and it comes out unabashedly when he speaks of his mom so dearly. God bless him and his whole family.

My folks had them too. One time one of the neighbors turned the blender on without the lid because his worked that way. Needless to say there was cocktail all over the ceiling! Of course everyone had a good laugh over it, and at every subsequent party.

Been watching Jack’s videos for many years with a mixture of affection and horror. Those flames!! It’s like Vulcan’s forge in that kitchen. I’m always waiting for his sleeves to catch fire. I remember when I first heard of Jack's passing, this was the first video I thought of because the little homage he said about his mom towards the end was so fitting of how I think all of us feel about Jack. Just like the cards help preserve the memory of her, these videos do the same for Jack. And I love him showing a master chef's best trick at 14:20. Full understanding of the word optional ;)

"Mother sauce" is a cooking term that refers to sauces that can then be made into other sauces. They are the base sauce that can be doctored into other sauces. It doesn't refer to our moms ;) They were defined in the 19th Century.

Too bad I never made it out to the restaurant to try his cooking. It was on my list this summer. When he did his videos, it was like you were family, and cooking right alongside him.

Funny how in French (Quebec and France) we call it "Poulet à la Reine" which translates to "Chicken à la Queen". Go figure! Btw I love your wholesome, oldschool cuisine style, Chef.

I just wanted to express my admiration for your easy going yet sincere approach to cooking. There's something so romantic and cool about a chef with a no-nonsense attitude and a passion for what they do. This video has really resonated with me and brought back memories of why I fell in love with cooking at such a young age. I have discovered a love for cooking and I am grateful that I have these recipes and how to videos. I am doing Chicken Ala King tomorrow. When I first watched I was like this is alot like what I learned about chicken pot pie. I love his way of cooking.

Chicken ala King might be a relic from the 70s but it a delicious dish that should always be enjoyed just like meatloaf, Salisbury steak or Tuna casserole.
