My pans take MUCH longer than 15 mins to cool. Should flip them after they cool off completely?

Sweating won't hurt the texture, but it does create a sticky mess on the plate!

Set it on a gas stove or stack a couple of equally-sized coffee cups and set the pan on that so air can get underneath it. In the old days they’d just set the cake in the window :)
