Steve , A multi tool is a great tool to have in your arsenal fpr stuff like this. Works great. You can cut cpvc, pvc, and do jobs like this one.

I find CO readings in the stored memory of my CO detectors whenever any plumber soldering is going on. It's not enough to set it off or display it live but I'll find it when I hit the Max button.

I've used plate covers in the past 4" electrical box covers, at home, I vice gripped them to joists anyway you can. It's a real deal Momma! Or sheet metal tin.

Laughed when you said let’s see if we can do this without burning the place down 😂. So I recently bought 2 “prepared hero” fire blankets made to put over and smother fires. Would be a good thing to carry around with you just incase a small fire starts from the torch or grinding or whatever. It’s reusable also

Darn pinhole leaks in copper pipe. Too bad there's no perfect pipe. Pex can be chewed on by rodents. PVC get's brittle and cracks, Copper can freeze and get pinhole leaks. Pex in a wire mesh like they use under the sink for supply lines would be interesting.

Can't see not unsweating the old elbows and replacing. Get rid of four old solder joints and not adding four more joints with the couplings.
