Copycat Chili's Monterey Chicken at Home | Easy & Delicious!

You will learn how to recreate the famous Monterey Chicken, complete with smoky BBQ sauce, crispy bacon, and double the cheese - a family favorite.

MONTEREY CHICKEN INGREDIENTS:
►4 small chicken breasts, boneless, skinless (1 1/2 to 2 lbs)*
►1/2 tsp fine sea salt
►1/2 tsp freshly ground black pepper
►1/2 tsp garlic powder
►1 Tbsp olive oil, plus more as needed
►1/2 cup BBQ Sauce, divided, preferably a sweet and thick variety
►8 slices applewood smoked bacon (not thick-cut)
►1/2 cup shredded Monterey Jack Cheese
►1/2 cup shredded cheddar cheese
►1/3 cup diced tomatoes, to serve
►2 Tbsp chopped green onions, to serve

I used similar ingredients but I made barbecue chicken sandwiches - I used ciabatta and added carmelized red onion, and then on top went chicken, barbecue, bacon, and cheese. After baking, I served it with romaine and sliced tomato to freshen it up!

So, I made this tonight. My husband loved it as I expected. The real news is that my middle little who works in a deli and hates chicken told me " this is fire! This is everything the deli wishes it was and never can be!" So I think she likes it😂

That looks good. I had to click on the video after I saw the name. My first job ever was in a steakhouse in the 1980s. The restaurant had a dish called "Chicken Monterrey." All they did was marinate chicken breasts in Kraft Catalina dressing and cook the chicken on the grill. That was it. That's the whole recipe. It was really good, though. Yours looks better.
