Worked at CB for years as a weekend short order egg cook (Sat & Sun, open until 2PM). I am sure this tastes delicious but if you want to the original CB recipe we used Colby cheese (not Colby Jack or Cheddar), and 1/4 cup melted margarine instead of sour cream. As for thawed or frozen hash browns, either is fine but if using frozen cook an additional 5 minutes or so to counter the cold from the frozen hash brown. I have made this dish at home altering the with cream of mushroom soup, cheddar cheese, and also with sour cream and all have a distinct difference but still very delicious.

Over low heat, melt the butter and soften the onions before adding to everything. It’ll make a big difference

AKA ‘funeral potatoes’ ..if you grate fresh potatoes you can grate in your onion as well and it’s nicely distributed and no chunks! Great job! One of our favorites

Absolutely loved it! Incredibly easy to make. My teenage grand daughter makes it for her friends breakfast when having a sleep over. It's quick to make and filling. She normally makes 2 large pans. Just to be sure everyone gets full. We adults love this too. Thanks for sharing. 🎉

I have used this recipe - it is fantastic. I also use this as a base for a casserole and add cooked chicken cut into bite size pieces, add a veggie like peas or broccoli pieces, etc. Instead of 1/2 an onion, I used chives. Of course, still used the cheese. Turns out really yummy.

I love dump and mix meals! I make this as a main dish. My family loves bacon or ham in it. It's the perfect casserole to use the left over Christmas ham.. The only thing I do differently is I grate the onion. When my kids were small they didn't like the bigger pieces of onion. Also freezes well! Thanks for sharing this recipe!

I’ve seen twenty different recipes for this same thing. The melted butter is new though. I just use room temp butter. Try using sautéed onions, heavy cream and fresh, sautéed mushrooms instead of the cream of goop soup. It makes a huge difference.

@@charrski2918 about a cup, yes. Sometimes I’ll add a little more cream or butter at the end if it looks too dry. Cream is sweet, so you might need to adjust your salt a bit.

If you have a mixer it will work easier also another tip if you put your onion and butter together into a bowl and put into the microwave until the butter melts it will also help with the stirring. If you don't like cream of chicken soup, use cream of mushroom soup. Cream of any kind of soup works. Cream of mushroom soup gives it a richer taste. At the end add any kind of potato chip crunched up in the bag. Spread it on top to add a crunchy crust, then add paprika for color and garnish! Then bake. 😋 I find if you use Ruffles potato chips, works and looks better. Try out any kind of chip. BBQ is good. Plus any leftover casserole? Use in scrambled eggs! Yep I said scrambled eggs. Prepare your eggs the way you do. In a pan spoon in as much of the casserole you want. Get it just about hot you will hear it start to bubble, stir it about twice. Then add your eggs or Crack them into the pan. Done ready to serve. If you are adding bell peppers and onions. Do them before adding the casserole. My mother made this all the time. Used it when we catered dinners.

Thanks for sharing! I use condensed cheddar cheese soup and cream of chicken. You can cook partially and pop in the fridge and finish cooking the next day. Colby and cheddar for me. Great video!

Oh my gosh girl I’ve never left a comment before … But I felt like I really needed to tonight. My family and friends love this recipe so so much! I have referred back to it so many times to make sure I remember everything and get it right. I made it yesterday for a big barbecue everyone went crazy over it . I have two friends that have requested for me to bring at tomorrow to their house for lunch. When I made it for them, I use the exact recipe but added cooked hamburger to it, which is amazing! It is now almost 1 AM. I am just getting it in the oven… Lol. I am a night owl, and and is worth waiting for. They are so excited to have it for lunch tomorrow!! I have shared this recipe many times, thank you so so much for letting me always have the best dish party!

years ago i started making this cause i wanted a cb clone hashbrown casserole and you nailed it to a t, same exact recipe i use. i do crush cornflakes to put on the top though. and i also found that fresh grated sharp cheddar off the block is so much better than the shredded cheese in a bag.

I love this go-to side dish. I use frozen hash browns, too, but I break the clumps up in the bag before I pour them. I find thawed ones tend to break down too much for my taste during the mixing process. I mix it up before preheating the oven so the potatoes have a bit of time to thaw in place before I put it in the oven. (I also add finely chopped fresh mushrooms when I have them.) A variation we make for a breakfast dish, I dice up 1/2 lb of bacon, spread it out on parchment paper and bake in 350 oven, stirring a few times until tge bacon is crumbly. I add the grease and all into the casserole. Instead of black pepper I use white pepper. I got hooked on white pepper in potato dishes from fried potatoes in our lical Chinese Buffet, their potatoes are amazing, bacony, buttery with onion and that white pepper bite!😋 Anyways, colby cheese is a better flavor than cojack or cheddar. The bacon is a wonderful, flavorful addition to breakfast! Cheers!

The night before I am going to make my cheesy hash brown potato casserole, I put my frozen potatoes in the refrigerator to thaw, or at least partially thaw. When I am ready to actually put the casserole together for baking , I go ahead and set the hash browns out on the counter to continue thawing while I get the rest of the ingredients organized. Small dice to the onion. ; while butter is melting in a skillet, add salt, pepper, onions and sauté until the onions are soft. Mix in soup and cheese, add potatoes , and combine all the ingredients. Pour into buttered baking dish and cover. Bake as directed.

Love this dish. I make something similar by adding browned ground beef for the bottom layer and cook my onions in butter and I use what I have on hand cream of mushroom or cream of chicken soup. I add cheese, cheddar or Colby jack and sour cream. Mix it all together, add tater tots on top. More more more cheese on top at the last 10 minutes. Shredded chicken breast is yummy too added to this original recipe. Thank you for sharing, I really like your videos.

I’ve also seen this recipe with a cornflake topping. Drizzle some butter over a cup or so of plain, unsweetened cornflakes, add to the top of the casserole for the last 10 mins of baking and they add a crunchy layer to the top.

Cracker Barrel used to have a breakfast casserole. They have discontinued it 15 years or more ago. They had eggs; ham, sausage, or bacon; hash browns cheese and I think some bread at the bottom. If they still had it I would still be ordering it,but you had to be early or they were all gone. Don't know what you could do with this info???! This looks great. As I was watching I immediately thought of an option for a great breakfast. I would make 6 small ‘wells’ in the potato mixture, and add an egg to each before baking. Then I would top with slices of bacon. Cover and bake as recommended, and add cheese as you do. It would be the perfect breakfast meal for when guest come, or to take to a church brunch pot luck. I think that another option would be to use cream of celery soup.

Oh my goodness!! Just came across your channel looking for this recipe. I’ve never made it, but had someone else make it loved it so much making for dinner tonight to go with steaks looking so forward to it !!! If you use your own shredded potatoes, it will have a little more liquid from the potatoes, I just cooked for about 10 - 15 minutes more or you can toss them in a little corn starch so they don't clump together and it absorbs the liquid from the potatoes.

I’ve made it with crumbled potato chips on top. This made me hungry for this. I’ll try the cheese and crumbled chips on the top next time.

If your using frozen hash browns. To not start off with clumps. Gently pound the bag against the counter top to loosen any large pieces. Then your off to the races.

Cracker Barrel hashbrown casserole is missing one major thing. If you are a southerner...you know exactly what that one thing is....a TOPPING!!!!! This casserole is VERY popular here in the south but us southern women know the REAL way to make it! Next time you make this.....you MUST try the go to topping for this dish.....CORNFLAKES AND MELTED BUTTER!!!! When the casserole is about 15 mins from being done.....take the foil off......mix together a couple cups full of crunched up cornflakes with about a half a stick of melted butter, and spread it out over the entire top. Pop back in and finish baking. It is a GAME CHANGER and MAKES the dish! TRUST!

It definitely taste better with the Cornflakes,I like the crunchiness... By the way it's not a Southern thing to add the Cornflakes..Lots of us that live in the Midwest have been making this for 40+ years, always a hit. I sometimes use the celery soup for variation,turns out very good

So here's the thing, just throw the bag of frozen hash browns in the microwave set to defrost. Takes like 5 minutes. Also, to make it a little easier, use the dehydrated onion pieces you can find in the spice isle, just cut down on them a little bit. I didn't cover my pan, and I put the cheese on top right when it went into the oven. So yummy, I think it's better than the one at Cracker Barrel.

I just found your channel. It doesn’t sound like you’re from the South. I have lived in Tennessee and Florida, back and forth all my life. I told my coworkers I’d make hash browns for an office party. They all kind of looked at me and each other, funny. Needless to say the casserole was devoured. Nobody knows what hash brown casserole or sausage balls is, in my experience, in S. Florida. I don’t think I’ve ever met anyone that doesn’t like those 2 dishes. If they’ve ever had them. Yours looks delicious! Have you made the corn flake topping for them before?

Even when I use fresh-cooked potatoes, I chill them before grating and then scatter them on a cookie sheet and freeze them before mixing them. Otherwise, you end up with mashed potatoes. Also, I "fluff" the potatoes in the casserole dish prior to baking. I never compress them because it can make them wet or pasty.

@@loriboyd4411 - Lori, if you use fresh potatoes, be sure to chill them a few hours after baking but before grating. For best results, arrange them, scattered, on a cookie sheet and freeze them before stirring with the other ingredients.
