My mom makes the best corned beef and she always makes gravy which I love. Lots of vinegar on the cabbage and mustard. Mmm

I use apple cider vinegar to both add flavor and tenderize the meat. I think apple cider vinegar works the best (not white vinegar). If you just want the sweetness you can use apple cider. Hope that helps!
