I have been cooking for well over sixty years, I love learning and looking at different recipes, from complicated to easy. My dear lady, if I may address you as such, it is a delight to hear your lovely English accent, down to earth instructions, a great video, much appreciated. Yes, I remember spam fritters, a staple meal in the past when there was so little choice to buy. Brilliant video, you could cook with me anytime, much respect!

That's is such a good tip about putting the tins in the refrigerator and then cutting the fat off. I never thought about that. My dad always makes corn beef and hash in the stove top. He cubes his potatoes and cooks them with onions and corn beef. I haven't had it in a long time.

We call this corn beef casserole in America but we quickly fry the corned beef and mix it well into the mashed potato. We also add French fried crispy onions ..... so good! Love seeing how everyone else prepares what we do. English cheddar is the best!!

I do it the same way my mother did, I slice the corned beef and layer it on the bottom of the dish filling in any gaps, mash the potatoes and layer that, and cover with sliced cheese again filling in any gaps and then into the oven. A little variation, but you have three distinct layers, and it's great with brown sauce.

What I tend to do is have a layer of corned beef on the bottom covered in a layer of baked beans. Then I have a layer of mashed potato and fried onions mixed up together. Then I add the grated cheese to the top and as an extra little touch I put 4 raw eggs on the top of it and bake them with the corned beef hash so they blend nicely into it. Looks and tastes amazing when it comes out 😍

@@deebest4202 go for it! 😁 only little tip I would give you is to bake it without the eggs for about 15 minutes so the cheese melts into it and then pop the eggs on top of it and put it back in the oven for about 10-15 minutes. Otherwise the eggs will be overcooked.

Onions are a must - adding milk to mash potatoes only serves to make the potatoes wetter not creamier - either use cream or alternatively use an egg. This along with butter is more than adequate for perfect mash spuds. I never use white potatoes for mash as they have to much water content. Use red potatoes - if in doubt ask your greengrocer.

You should not cut and throw away the fat. It adds a lot of delicious taste to the meal through the cooking process. I have noticed this a lot with home-grown cooks who grew up in the 90s with the erroneous idea that all fat is bad for you and to be avoided. Fat adds a lot to taste, especially with meat.

I like to slice mine then fry till it has a crust then cut it up, mix it with the mash and onions. Then onto a electric hot grddle/pancha to crust it up, usng a spatula to flip it over for more crust. I normally leave the fat on the corned beef slices while i fry them on the griddle and use it for the hash crusting later. I use up left over pork/chicken/beef/veg even roasted potatos smashed flat and cubed added to the mash, adding corned beef to stretch it if needed.

I must admit I make mine more lumpy. Sort of mix the Corned Beef into the Potatoes whick are in chunks. I also add in Frozen Peas or some cooked Cabbage if I have some. Never thought of making it like this, in the Oven. Worth a go I think cos I love Corned Beef Hash. btw I felt physical pain when you were slicing off the fat because you were slicing away meat as well. :-) Baked Beans is a good accompanyment. I have seeen this where the beans were incorporated into the hash but I prefer them separate.

Try leftover hasselback potatoes. I make extra hasselbacks for that purpose, and mix in deli-sliced top round corned beef with onions sautéed in the leftover butter and herb topping for the hasselbacks. Also works with leftover baked potatoes, minced, add thyme, rosemary, and minced garlic. Sauteed onions are an essential ingredient, but I have never heard of using cheese. Corned beef hash is best heated in a hot skillet until the potatoes are browned, and served with a poached or over-lightly egg on top.

Canned corned beef hash needs to be “smushed” flat in a frying pan to properly fry or cook it. This also requires it to be thoroughly turned and mixed over and over until crispy. YUM! I also mash my potatoes with a masher like you do. At my age I watch my weight. It keeps going higher and higher when I cook like this! LOL. I haven't had corned beef hash in over 30 years but after watching you make this im gonna give it a try. I remember when I had it last my dad's friend who cooked it last time I had it all those years ago put eggs on top of it and cooked it not beaten eggs but overeasy eggs and the yolk would be soft and mix nicely with it. I guess that's an American thing But I like your recipe that looks delicious.

Do the Brits only have canned corned beef, and not whole cuts of fresh corned brisket? Not having solid small potato pieces seems a lacking too. This may be easy to prepare, but not the kind of hash Americans are used to. Use of spice is lacking too...only some salt and fine ground pepper. I put lots more in plain mashed potatoes! Cheese is highly optional if the main dish is otherwise good.

It's got to have onions, cube everything, cook but don't mash the spuds, and the fry in a deep pan turning often, leave for the last few minutes for a nice crisp browned bottom. Turn over onto a plate, serve sliced like a pie with pickled red cabbage.
