If the diff/ trans was attached still could you lower it enough to unbolt them from torque tube this way

you can but you need to be very careful. There is very little room between the rear of the engine and the fiberglass firewall on the C5's and if you aren't watching it's very easy for the engine to permanently damage the firewall when using this method. There is actually a information picture label on the torque tube under the center tunnel brace that illustrates the maximum angle you can drop without causing damage.

You seem to know a lot about the corvette. I just bought a corvette from the auction and it seems to wobble too much from side to side. Also from an eye view you can tell the rear wheels are not centered. Do you know what I should check first?

If we are talking C5, my first thought would be to check the rear tie rod assembly. It is a split two piece design and a worn or out of adjustment tie rod can cause that kind of "wobbly" movement. If you need any more information, just let me know👍
