I was spoiled growing up. We got our milk straight from the local dairy farms. So fresh from the cow, non-pasteurized, honest to goodness milk. We could (and did) skim off the cream to make real ice cream, and also (on occasion) make homemade butter. But the butter was a crazy amount of work, so that was only done from time to time. My parents never tried making cheese, but i bet we could have made some amazing cheeses.

Looks so good my Mom told me to add apple sauce in the Cottage all to taste now this is how I eat cottage , we make our own apple sauce . We cut back on the sugar taste much better this way thank you John .

I realize I'm the weirdo here, but in my family cottage cheese is primarily eaten as chip dip. Crunchy salty chip + cold creamy cottage cheese = actually pretty good.

Hi John I made my first batch, but the curds didn't keep their shape very well, particularly when I mixed in the salt to taste and cream. Why would that be? They didn't seem to firm up much at the stirring stage when I stirred every 5 mins, 9 times?

Amazing texture of this cottage cheese. I come back to your channel because your skill is obvious and it is presented in a nuts-and-bolts fashion that is easy to understand. I used to make fresh mozzarella cheese on a regular basis at an Italian restaurant, but the method was easy compared to this.

Love your recipes, John - practical, down to earth and very tasty. I found this one particularly interesting. I used to keep goats and made yoghurt and cheese but I haven't done it for 35+ years. This video inspired me to think of starting again. My question: I have a friend who recently had a kidney removed due to kidney cancer. She is supposed to avoid SALT at all costs as her remaining kidney is underperforming. How crucial to the PROCESS is the salt you added? Is it only added for flavour and could it be omitted, provided other strong flavours were used? I can imagine that the salt could be omitted from your cream and pineapple recipe UNLESS is was essential for the manufacturing process. Thanks in advance.

It is quite curtail as it controls the bacteria that grow inside the cheese, helps with texture development, regulates moisture, and helps preserve the cheese as it ages.

Unfortunately, I can't really say as the conversion from liquid to dried rennet can vary depending on the manufacturer, so it's important to follow the instructions provided with the product.

I live on a dairy farm in Scotland but I can't have a single drop because of the raw milk law prohibiting it's consumption and so I have to buy it from a supermarket 🙄

I brought my children up on a dairy farm in Somerset. We all consumed raw milk and never had a problem with it. Didnt know it was prohibited in Scotland, what a shame.

Hi John, I thought my curds had set well, but by the time I stirred in the salt and cream they really lost their shape. What would you advise please? They didn't look as firm as yours. The cheese is delicious, it's just more like cream cheese now. Thank you!

Apologies for the late reply Liz. There is a few of factors. Over-stirring too much during the cooking process can cause them to break apart and lose their shape. Also If the acidity level is too high or the curdling process is allowed to continue for too long, the curds can become fragile and lose their shape. As well as, if the temperature is too high during cooking this can lead to excessive firmness, making them more prone to breaking apart. I hope that helps.

I'm not sure, I was really careful with the heating and stirring, timing it how you suggested with jotting down each timed increment and made sure temp didn't go over. Have you ever made it using just lemon juice or vinegar instead of cheese starter and rennet? Wondering how it compares. Many moons ago I got some stale-dated dry curd (uncreamed) cottage cheese from the dairy, and long story short it wound up spending several months frozen and then forgotten outdoors until spring.... and when it was finally rediscovered, it had turned into the most marvelous hard white cheese, similar to Swiss. Now I'm wondering if your recipe would lend itself to that...

Quick question, I’ve watched both this and the cream cheese recipe. I’m wondering if it would be possible to use half the quantity of milk and other ingredients and just 1 of the little cubes? Or would you recommend something else? The full batches would be rather a lot for just 2 people.

It can be tricky altering the amounts, so what I advise it to freeze the cottage cheese in small containers. That way you have a nice supply.

Hi John, unfortunately my curds havent set when Ive unwrapped my pot and taken the lid off this morning :( is there anything I can do to rescue this batch ( 4 litres raw milk!) I am very loathe to throw it away if there is anything I can do?? HELP?? Thank you

You could try gently reheat the milk to the target temperature and add a bit more rennet if the curds still do not form. Dissolve the rennet in cool, non-chlorinated water before adding.

It's been at a steady 21 degrees and seems to have firmed up somewhat, although I think smells slightly more sour. I'm tempted to cut it up and carry on the process from there - do you think?

I got there in the end John! Took about 90 minutes and increasing the heat very gradually but the curds firmed up. Am now trying to make some ricotta with the whey...that's proving challenging too! Am using lemon juice as I ran out of citric acid. Will leave it for 30 mins after adding a bit more lemon and see if it starts forming curds. Thanks for your help!
