Black Forest Cake - This cake is heavenly especially with a little bit of alcohol flavour. Cotton soft and light. It’s made out of the chocolate sponge which I did earlier in another video. Hope you’re inspired to make this cake. Enjoy!

Ingredients:
- Cherry Sauce
100g (1/2 cup) fresh cherry (seed removed)
50g (1/4 cup) fine sugar
1 tbsp lemon juice
- Chocolate Sponge Cake
(I am using 7x7x3-inch square pan)
5 egg yolks (large eggs)
80g (1/3 cup) caster sugar
80g (1/3 cup + 1 tbsp) corn oil
100ml (1/3 cup + 1 tbsp) milk
120g (1 cup) cake flour
30g (1/4 cup) cocoa powder
5 egg whites (large eggs)
80g (1/3 cup) caster sugar
½ tsp cream of tartar
- Frosting
500g (2 cups) whipping cream
30g (1/4 cup) powdered sugar
- Filling
200g (1 cup) fresh cherries (seed removed), cut halves
Brush with cherry sauce
- Deco
Fresh cherries
Whipped cream
41g (1/3 cup) grated chocolate
Instructions:
- Cherry Sauce
1. Remove the seed from the cherries.
2. Add cherries, sugar and lemon juice in a small pot. Cook over medium heat. Mash the cherries. Cook until it is thickened.
3. Strain the sauce.
4. Add the kirschwasser or rum (whichever you desire, you can also leave this out). Give it a quick stir and set aside.
- Chocolate Sponge Cake
5. Preheat oven at 150°C/300°F.
6. In 2 large bowls, separate the egg whites and egg yolks. Set the egg whites aside.
7. In the egg yolks bowl, add the sugar. Mix well until well combined. Mix about 1 min so that the sugar is partially dissolved or dissolved.
8. Add the oil and milk. One at a time and mix until combined.
9. Sift in the dry ingredients. Fold in using a spatula until just until the flour disappear. Do not over mix.
10. In the other egg whites bowl, add in the cream of tartar. Mix it until bubbly or foamy. Then gradually add in the sugar, little by little. Mix until stiff peaks formed.
11. Add the egg white mixture into the chocolate batter. Use a spatula to gently fold in the egg whites. Switch to a whisk and continue folding in a circular motion. This method will help in elevating the cake later. Do not over mix at this point. Mix just until the whites are gone.
12. Pour into a 7x7x3-inch pan, greased and lined with parchment paper.
13. Bake it at preheated oven at 150°C/300°F for 30 min, then reduce to 140°C/285°F for 35 min (to prevent cracking on top). Insert a toothpick to make sure the toothpick comes out clean.
14. Leave the cake on cooling rack.
15. Slice into 3 sheets. Set aside while preparing for next.
16. Cut the cherries into halves. (for the fillings)
- Frosting
17. Mix the whipping cream. Add in the powdered sugar. Continue stiff peaks form.
18. Assemble the cake. Refrigerate 1 hour before trimming the sides.
19. Grate the chocolate compound.
20. Finally pipe and decorate with grated chocolate and cherries.

Another Amazing recipe. I doubled the recipe because I have a larger tin and I used jar cherries from the supermarket because it’s not in season. Turned out amazing! Thanks!!

Hello Valentina. Oh yes, the trimming...it was quite scary to dive in the knife, worrying that the cherries don't appear as planned. Thank God it turned out just fine. Black Forest gateau was hugely popular in the UK in the eighties Fiona, but I never saw one as beautiful as this 😋👍

You may leave out the alcohol if you can't take. You don't have to replace with anything. Alternatively you can replace with any non alcoholic base like sparkling juice 😊

Frappacino I don'y see as a big science discovery to just replace with any other oil and I'm sure without any alcohol the taste will be as good as. I never put any alcohol into cakes.

I don't have a 7in square tin pan but I do have an 8in *glass* square. Can I use that instead? If yes, what would the baking time be? One last question. What oil can I use other than corn? I would hate to buy a bottle of corn oil just to make this cake. Please answer asap. This looks amazing! 😋 It's one I've never made nor tasted... 😏

Hi my dear. I can't comment on glassware as I have never use one to bake this cake. However I strongly recommend aluminium pans for baking most cakes. If you bake frequently, best to invest in a proper baking pan. A well balance heat is important during the baking. As for the oil, you can use any vegetable form of oil like canola oil, sunflower oil. Hope I answered your questions

Yes vegetable oil is great too. Never beat yolk and white together as we depend on the meringue (egg white) to rise the cake. Even a dot of yolk in the egg white will effect the success of the meringue

@@cherylrwb Yes the normal ones with yolk and egg white beat together usually add air leavening agents, b soda and b powder. The other method will be genoise 😊

Hi, the cake was awesome and it tasted really great... thanks for the recipe. But I just wanted to tell you, that, since I didn't hav butter paper to line the cake tins I used butter and flour to dust the tin and added the batter...the only problem I saw was the baked cake was shrinking from sides, top was perfect but I still got a perfect square cake coz I cut the sides....can I know the reason for shrinking at the sides.

Hi. I always love watching your video. However, I've tried several times before to frost my cake using whipped cream only like how you did, but it always melted very quickly. Wonder how could I overcome this problem as I am staying in Malaysia (summer all year round). Do you have any tips on this? :)

Hi Fiona, Black Forest Cake is always my favorite and I plan to make one for my own birthday! Just one question, do I soak the cherry with kirsch overnight ? As I recall seeing it somewhere else that it does.

Hi dear. It is not really necessary to soak the cherry so that they remain fresh for this cake. Maybe the soaking you're referring to is dry fruit cake or plum cake? Fresh cherry after soaking will result in sogginess and they may not stand in shape. That's my personal opinion, but no harm exploring 😊

Thanks for your feedback if i want to make this cake with round tin how many inch must be w if i have a 10 inch of round tin can i double the recipe?is the time of baking change please reply if it change how long mustbe?
