To measure out a fraction of an egg, I usually beat a single egg and then get a measurement of the total beaten egg to figure out my fraction I need. You can always use the leftover egg for breakfast. Hope that helps.

I use quail eggs. 3-4 quail eggs = 1 chicken egg, so 1/4 recipe would use 1 quail egg. So easy and you can use the whole egg…no waste!

I don’t think I’ve ever had a quail egg before. Do they taste like chicken eggs? I see them in local stores all the time.

I am going to make three changes when I try this recipe: use white chocolate chips, don't stir the jam into the batter so thoroughly, and add some chopped, toasted walnuts.

I've had that problem before with chips that were too big. I bet the cherry flavor was amazing, especially with pink pepper corns! Where I grew up we had lots of trees that had big bunches of pink peppercorns.
