Try glassing the eggs. It is a long term storage solution for eggs that can last you all winter. Look up egg storage ideas here on KZbin for instructions. That is the method I use and it has worked for me for over 35 years...

With the eggs you could make fresh pasta and freeze it. It’s also great to use up any extra bits of meat in ravioli and agnolotti fillings. Rabbit, hare, boar, duck and goose all make amazing ragu for tagliatelle or pappardelle.

JudithB I scramble older eggs and feed them to the dogs and the chickens. Great protein boost with winter coming! I am going to make venison sausage as soon as I get some pork fat. I eat a lot more sausage then burger altho I freeze beef burger into patties too. I like to make cake mixes in vac sealed jars and also Hamburger Helper type mixes for my pantry. I dehydrate oregano, parsley, onions, chives, rosemary, terragon and sage. Great for making flavored salts and herbal mixes or vinegars! Extracts are fun to make too. Lots of winter/rainy day projects to add to your pantry!!!

You can freeze eggs scrambled in Ziploc bags, thaw over night, or boil in the bag. You can also add seasonings, herbs, blanched veggies, grated cheese, cooked meats, basically anything you'd normally add to eggs. Boiling in the bag the eggs come out real good. Another helpful hint if you scrambled eggs are gonna sit awhile add some lemon juice while cooking, it keeps them from turning color. Enjoy the good life.

Pate Shue dough requires several eggs. makes great eclairs and creme puffs. You can also make pastry creme and freeze it. great filling for doughnuts eclairs and even as a fruit pie base. Playing with those recipes should keep your egg problem in check but no promises on your waist line. ;)

A Full Pantry & Full Deep Freezers Are A Very Good Problem To Have IMHO.. how ever in my experience Rabbits Will Freezer Burn Really Easy If They Are Not In A Vacuum Sealed bags ! We Harvest a lot of Rabbits Usually about 25-40 at a time & that was our only trouble was keeping them from freezer burning until we started vacuum sealing them !

Pickled eggs in a 1/2 gallon jug. Nice pantry and freezer footage. Was this year a record rainfall for you? Sooner or later the Mrs. is gonna want a cute calf. Make sure its a heifer. Milk,creams,cheeses and butter. I see more work for you in the future. LOL. At least you'll get to build something. Through all your hard work and sacrifice, You're living the dream of many. Maybe I have a bunch of crazy chickens but they go out in any weather. I never think they will but I open them up and out they go, they’ll stay out or go in and out, I swear nothing bothers them.

No, it is called the Dave Ramsay total money makeover. We started January of 2010, got out of debt, paid off our house. Then saved as much money as we could for a few years. Sold everything and moved to the country.
