He also expects better from "professionals". The people in those competitions are professionals that compete to become chefs in his restaurants. And they keep fucking up risotto? And scallops? Repeatedly? He has no time for that bs. If you go there as a professional, you have to cook as a professional. and if you are not up to the standard, you piss him off. He does not act this way in shows with unprofessionals, he is harsh in his critique, but he leaves it at critique, he never yells and loses his temper because that's not what he is there for and he also does not expect amateurs to be perfect and able to do things at his level perfectly every week. With kids he is absolutely amazing.

Well its one of the big differences between hells kitchen and master chef. He is far harsher in hells kitchen because those competitors are supposed to be professional. On master chef and maxter chef kids he cuts far more slack and a hell of alot nicer to the kids, though I think the other judges help with that.

As someone who works in a commercial kitchen, all of that yelling and cursing he does is poor management on his part. Tell me--how many people would work for a man like that in the real world?
