Sorry about that! The actual jalapenos taste like very sweet spicy peppers. I would prefer a bit more heat to offset the sweetness of the stuff. The actual syrup leftovers though is amazing. Very sweet with a strong jalapeno flavour, and goes amazing of pork....my favourite being ribs, my favourite baste/sauce for ribs right now. But again would probably prefer a little more spiciness, maybe about 3 or 4 times as hot...cayenne, or birds eye maybe. Will try that in 2019

MY EXPERIMENTS!: I made cowboy candy last year for the first time- ONE OF MY FAVORITE THINGS EVER and currently preparing for this year's crop- I did a LOT of experimentation and testing at parties... Results were as follows: Need the 6 cups sugar- I backed off a bit on the sugar for a few because 6 cups sounds like SO much sugar, but the heat needs that full sweetness of 6 cups. You can add REALLY hot peppers in it- just be prepared. These is definitely a science between the heat and the sweetness. People's favorite was when I halved the sugar with brown sugar- so half white/half brown, it adds a complexity to the taste- which this recipe is all about. Vinegar: apple cider vinegar is a little mellower-but also creates more dimension. So I also do half and half there because I like the punch of white vinegar taste. I find you need much more of the sauce in the jars when canning, because the jalapenos absorb the sauce and a lot of sauce with the peppers on a cracker with goat cheese is simply the best and I always found i needed to add the sauce to newly opened jars. I minced some of the peppers - not as enjoyable and pretty as just cut. I slice peppers thin because yikes do they have a punch! Love peppercorns in the pot and put TONS of fresh minced garlic in there- best eating ever! EXPERIMENT!- I used everything I could think of: rosemary, cumin, fresh dill fronds, basil, sweet marjoram, etc, etc. and labeled each one. Didn't touch them for 2 months. I still have some from last year they are simply the delicious! I'm going to try some molasses this year and maple syrup, probably some bourbon. At our vegetable garden party last year, I brought one of my first jars of cowboy candy, goat cheese and rice crackers... as people who were afraid to eat it because of the heat, and those who winced at the first bite and exclaimed " that's hot!"- they all got addicted to it by the end of the night, couldn't stop eating it and finished it off, and were wanting the recipe- It's THAT good and just an incredible recipe that someone made up! Use the leftover fluid and turn it to pepper jelly. You can still use it on meats as a glaze but it also serves as a nice side for a roast, roasted chops, and even pairs amazingly with Turkey and Dressing

I got a jar of these from my aunt who makes them well. I didn't know what they were, and used them as a garnish on top of a lasagna. They were so sweet and delicious, I'm super glad I found how to make them!!! Thanks CC!!! Awesome video!!! *edit - I put them on the lasagna when I put the extra cheese on at the end (last ½ hour), so they were browned, which 'candied' them even more.

just a suggestion. half pint jars and leave 1/2 inch headspace. you need the air space so it makes a good vacuum seal. as the air is heated, it expands and is forced out. when it cools, the air contracts, there is less "molecules", so it creates the vacuum. cheers

I made this for the first time this year back in September when the jalapeños were 25¢ a pound at our farmers market. It’s amazing poured on some cream cheese to dip crackers into. I love them on pizza or sandwiches. There really is no comparison to anything else. But it can pack a punch.

@@ChilliChump This is a super great suggestion mainly because in Canada we drink Caesars, which is a variation of the Bloody Mary. They're made with Clamato juice (tomato + clam juice), a bit of Worchestershire sauce, hot sauce, vodka, and rimmed with celery salt. So putting this syrup in a bloody mary is making it more like a caesar, which is a very good thing!

I canned Cowboy Candy for the first time before Christmas. I opened a jar for dinner tonight and they were absolutely wonderful. I left the seeds in as I like spicy foods.

Seeds do not contain any heat whatsoever...its from the oil.

Chopping vs slicing the peppers results in way fewer peppers per jar... We have discovered it can get a bit dry then as it absorbs the liquid after canning, sitting on the shelf. Also, the liquid is amazing cooking product!

From five years ago when you first presented the cowboy candy I’ve been making it ever since this year I made 12 L of cowboy candy and it all sold out in no time. When you can/bottle (depending on which country you are in) have a tea towel handy to place the b Hot jars on, do t let them touch each other and to slow down the cooling cover with a towel. This helps the glass cool down at a sensible rate so they wong shatter on you.

I made cowboy candy for a pub I used to cook at. We would take the extra liquid and mix it with rye whisky. Spicy drinks!

Good Recipe! I use a similar one.. Turmeric is interesting addition.. I use lots of finely chopped Fresh Garlic! A instant pot pressure cooker is fantastic for small volume canning..

I used to tend bar and a lady brought me a jar that had cauliflower celery and other veggies that she pored that leftover liquid on. They were a very good snack!I just kept them behind the bar and shared with friends when they stopped by for a beer.

Just recently discovered your channel and binge watching. I've been making cowboy candy for years.its wonderful stuff. Any pepper is delicious done this way. Make them as hot or mild as you like. I make them with sweetener now for any of you that needed to do away with sugar. I put them over cream cheese for a dip, over burgers,mixed into burgers, added to grilled cheese. There are many ways to use them. I've made fermented Serrano pepper sauce and it was delicious but that's all I've experimented with so far. Now that I've found your channel I want to try some more.

Cooking chop stick is a long Chopstick (2-3 times as long as a standard) made from a less porous material then standard chop sticks. Japanese and many Asian cultures use them when cooking over westernized utensils! Great video by the way.

When I make cowboy candy, I only cut the peppers in halves. That way you can eat them like pickles. Also my uncle, after they brine for 2 weeks in the jar, he take them out and dries them in sugar. Just like other candied fruits. It gives them a licorice texture. I think the sugar has some salt also, but I'm not 100% on that.

Loved the definition... spicy candy... ;) Very interesting... I have made chocolate-chili hard candies and toffee - but never thought of making/turning a hot pepper into a candy... Looks interesting. I'll give it a shot but try to turn it into a hard candy.

I refuse those lids, i boil them in a pan with water for about 5 minutes and they're good as new! Love your work

I did the cowboy candy...but instead of apple sider vinegar I used red wine vinegar...delicious...thank you as always ChiiliChump...I consider myself really lucky to have known your KZbin Channel....

Use the cowboy candy over cream cheese with crackers for appetizers and chopped in deviled eggs, potato salad, and on a hot dog/grilled brats instead of relish. With the leftover syrup we love to mix it with a few spoons of fruit jams to baste pork chops/ribs and chicken. Our favorite is raspberry for pork tenderloin/ribs and apricot/peach for grilled chicken breast.

Made this a couple weeks ago according to this recipe. Excellent! Will try with a few habs in there next year. I’ve been using the extra syrup as simple syrup in cocktails. The margaritas are a must try! Cheers!
