Greg, here is what you are doing correctly. 1) Your own personality shines out 2) You explain the ingredients 3) You link to the recipe for you ingredients 40 you demonstrate the method 5) you show the money shot 6) you taste your creation and you react to it Here is what you are doing incorrectly 1) nothing I think your vids are very instructive and empowering for us to experiment. Kudos to you!

Why Reverse sear didn't become THE classical way to cook steak ? It's so much superior in any way to the classic method, maybe because it's a one step process. Love your videos.

Just what I was looking for. Just ordered the RT-700, I was a little concerned with the sear ability but this killed any doubts. Great job!

The Rec-Tec is back! So versatile! Nearly 3 lbs of great rib eye being grilled with the sunset in the background! Makes for the perfect video in my opinion. Though I am curious, where do you get all of this wonderful looking cuts of amazing beef?

Question on what are the ingredients for clarified butter. Can;t wait to try this on my rectec. However my rib eyes, don't have a bone, and only weight about 1 pound, so I assume that cook time to reach one 120 will be a lot less.

After trying reverse sear a few times including this past Father's Day, I am completely sold. I don't think it's possible to cook a steak more perfectly. Also, it's one of the few cooking methods in which the home cook can surpass a good restaurant, because the relatively long cooking time (almost an hour including resting time) of the reverse sear makes it impractical for most restaurants.

Ballistic BBQ Looks like there was quite a bit of unrendered fat there, how did that hinder the steak or how did you deal with that?

So reverse sear just means smoke it to slightly under the target temp, then sear it to finish. Am I understanding that right?

Reverse searing is just cooking it on low heat either in the oven or the cool side of the grill before searing it on a hot pan or hot side of the grill. If u dont have a thernometer and ur eye balling it then i would put a steak (1 1/2 inch) in the oven or cool side of grill for about 16 to 17 min at about 250 degrees. After that let it rest for 10 min while u either get a pan real hot or the grill real hot. Sear it for about a min or so on each side and u should get a medium rare. For best results use a thermometer

hi greg, steak looks good. i got a rec tec 2 months ago and i love it. ive gone thur well over 100 lbs of pellets, ive done a few pork butts, hamburgers hotdogs steaks chicken wings just did a brisket the other day. it makes grilling so simple and easy. everything taste... so if your looking to do more vids,, id to see some on the rec tec....

Epic is the correct word Greg, that Steak was perfect. I am a firm believer of Reverse Sear, it is just a better way of Grilling. I just did one about that size, maybe a little smaller, on my new Big Joe and I thought it was the best Steak ever. Great Cook Greg!

Hi Greg, the ribeye came out great. However the price on the Rec-Tec is tough on a limited budget. I was thinking about buying the pit-barrel cooker. Would the ribeye come out as good on the pit barrel. I know you have too wait for it it get up to Temp. But the prices compared are miles apart. Also I am afraid the Rec-Tec could break in a few years, whereas the Pit Barrel, what can really go wrong? Please let me know your thoughts, as my current webber Gasser is about done, (rusted, etc...) and I need to replace with something new. I am trying to stay below $1000 since it's just my wife and I. -- Thanks!

ira Albucher Ira, Larry from the wolfpit just did a review on the smaller 300 series Rec Tec pellet grill.its very light and portable his young teenaged daughter could easily pick it up.you can cook two pork butts or one brisket on it .check out wolfpits review.it should also be cheeper as its smaller.hope this helps.

hi greg , really good jod... steak looks killer!!!! greg, i did a 30 day dry aging process ( umai ) , went perfectly , steak's really really incredible taste. for me, 100% worth the wait . umai is now part of the family. i have one question greg ( and i know i'm off the topic but... ) : did you see a change in the cooking time of the dry aged steak? for my part , i completly scrap my first. i did cook by time instead of probing... as result of a medium steak.... which was awsome though... even overcooked it was very tender and tasty. my others were probed and went perfect.... and were also reverse seared. anyways , thank for introduced me to umai... i'm gonna be a hero in my hometown quebec, canada.... ciao and all respect for your work. - pat.

Why not season the meat first??? This doesn't make any sence to put salt and pepper on a dry crust😧

Daniel M P with reverse sear, if you add salt at the beginning, it will draw out too much moisture while it cooks. If you add pepper at the beginning, it will be too bitter due to the time it’s on the heat. You say dry crust but before you do the final sear, it’s moist enough to have the seasoning stick on.

Ahh the video I was waiting for, I really wanted to know how that thing cooks a GREAT steak, thanks. $0.02, the music was really distracting, you do a great job with your regular format. You don't need any extras to make your videos interesting, they already are. Keep up the good work!

noytheyah Thank you! I think the electronics on the grill messed with my wireless mic, so I covered some of the static noise with the music. Need to do a few audio tests with the RecTec!
