Mmmm ribs. I do it similar, but backwards. I get the silver skin off, season, then wrap in foil and bake at 275 for 3.5 hours, ribs up. Then I throw it in my grill with an abundance of wood chips smoking away for about 5 minutes to get a bit of that smokey flavor. Then I sauce the top, flip, sauce the bottom, cook for 5, flip again cook for 5. Sauce the top on last time and pull it off to sit for 5-10 minutes then cut. I like this way as I can get a good caramelization going on in the bbq sauce from the grill that the oven doesn't quite match. The way you are showing definitely makes it easier though, cutting after the fact is a bit messier for sure.

When I cook country ribs I pressure cook them with a bit of vinegar in the cooker. I was always told that vinegar breaks down the fat. When they come out they just fall apart. Then I would throw them in a pan and season and slather them with barbecue sauce of whatever flavor you like. Then on to the grill and voila! I’m going to try your baby backs. I already have all your cook books and spices so I’m set!

Love it! Gonna try this method next time the wife wants some ribs in a hurry. Normally I smoke em for an hour or two then throw them in the pressure cooker. I very recently figured out your smoking trick. The perfect smoke isn't one particular wood. It's one very energy dense wood that burns long and hot (Oak/Hickory) to form a nice coal bed then get your aromatic woods in there (apple/cherry). Trying to keep a pit going for 8 hrs with just cherry or apple is an expensive pain in the butt.
