I received a reply saying I’d won and the channel is using the picture from your original of 14 years ago and current image. Pressure cook if you can! I have had incredible luck marinating them overnight with some Lime juice (natural tenderizer), liquid smoke, A1, salt, etc- then after it starts chattering, 22min, then broil 5min to crisp it up some. I used the pandemic to learn how to make them fall off the bone like a pro, and to get invited to dinners these days!

Mmmm ribs. I do it similar, but backwards. I get the silver skin off, season, then wrap in foil and bake at 275 for 3.5 hours, ribs up. Then I throw it in my grill with an abundance of wood chips smoking away for about 5 minutes to get a bit of that smokey flavor. Then I sauce the top, flip, sauce the bottom, cook for 5, flip again cook for 5. Sauce the top on last time and pull it off to sit for 5-10 minutes then cut. I like this way as I can get a good caramelization going on in the bbq sauce from the grill that the oven doesn't quite match. The way you are showing definitely makes it easier though, cutting after the fact is a bit messier for sure.

When I cook country ribs I pressure cook them with a bit of vinegar in the cooker. I was always told that vinegar breaks down the fat. When they come out they just fall apart. Then I would throw them in a pan and season and slather them with barbecue sauce of whatever flavor you like. Then on to the grill and voila! I’m going to try your baby backs. I already have all your cook books and spices so I’m set!

Did these a while ago with St. Louis style, with the measurements shown in the video ... "oh about this much." I separated the ribs before adding the lime juice, though I did not add the mustard, since the rub adheres just fine without it. ( I just wasn't in a hurry, to flip. ) These came out phenomenally. (Tomorrow, I'll be doing this with the measurements on your site.)

Love it! Gonna try this method next time the wife wants some ribs in a hurry. Normally I smoke em for an hour or two then throw them in the pressure cooker. I very recently figured out your smoking trick. The perfect smoke isn't one particular wood. It's one very energy dense wood that burns long and hot (Oak/Hickory) to form a nice coal bed then get your aromatic woods in there (apple/cherry). Trying to keep a pit going for 8 hrs with just cherry or apple is an expensive pain in the butt.

As a North Carolinian, huge respect for using Texas Pete. It's a great hot sauce! If you know, you know!

i did mine by splitting them, and then dry easoning, a little beer and chicken broth, and put them in the Instant pot on pressure cook. Not long..15 i think. Grabbed them, dipped them in my fav BBQ sauce, then wrap in foil and throw it on the grill. It was pretty good. BTW - if your "in laws" call to invite themselves, leave the house and turn off all the lights. NO BODY should "invite themselves" to your home.

I’ll have to try mixing cherry with mesquite. Cherry stands beautifully with pork on its own, but I have mixed cherry with the other great wood for pork,,,, peach wood! Peach and cherry go beautifully together, but trying mesquite with cherry definitely has me interested. I’ll have to give it a whirl!
