I had forgotten all the times my mother had made Tuna Casserole. There were 6 in our family, 4 hungry boys, mom and dad. Mom was an expert at making money stretch tight enough that Washington could have crossed the Delaware on a single dollar. I called my mother, who turned 95 this year and told her about this video. I remember tuna casserole very foundly, Mom always mad plenty of it. She used saltine crackers because she could get them in bulk and 4 cans because she had to stretch the meat. But I always think of it fondly. Ironically, she told me by the time I was seventeen, all of us would go "Oh no, not again." But there was never leftovers and I still remember my mother making tuna casserole. I won't be able to get down to see my mother before New Years Eve, but we decided that dinner that night will be me cooking Tuna Casserole for the two of us. @@crystalhaiku Just an update: I moved into my Mom's house in December. She told us, at 96 years old, that she was tired and I had the ability to come down and take care of her. She passed on July 2nd, quickly and quietly. Crystalhaiku, you were right. This was the best 7 months of my life.

I thought my mother invented tuna casserole. Really I did. Growing up in the 1950's my mother could make any left over into a casserole and her 4 boys would eat every morsel with no complaint. WAIT my youngest brother hated peas but there was peas in everyone of them. But she never wasted 4 cans , I think there was one can, but it was filling and we loved it. Mom is gone, and so is Dad, but the memories of setting at that supper table with a steaming casserole waiting her hungry crew remains and just the scent of it cooking today makes me remember those days. Thank you Kent and Shannon for reminding me of those days....

Huge fan of Kent Rollins!!! 07:00 HEAVEN-ON-EARTH (visually) JACKSTRAW TUNA CASSEROLE (my favorite entre) 2 cans tuna 1 can cream of mushroom soup 1 small-med onion 2 cups fried shoestring cut potatoes Saute onions after chopping mix with mushroom soup add drained tuna mix in 1 cup shoestring potatoes place mixture in appropriate sized oven safe container (ideally a casserole dish) bake 350f for 20-30 min or until deep golden brown on top A salad of fresh vegetables and a variety of greens rounds this off to be a pretty basic meal

I love your videos, Kent. I live in a rural part of San Diego. We get snow several times each winter and the Butterfield stagecoach used to run right through the area I live in. We have cattle on the sides of our highway. We have real working cowboys out here that round up the cattle. I love the old west way of life.

Another family fav around my house. It was a great quick meal that anyone CAN make. As in I used Canned cream of mushroom soup, Canned tuna, Can of mushrooms and a Can of peas. Served it on toast I did. I still make it for myself these days, good food and plenty of it without breaking the bank. Not a big 'cheese' fan myself, but the top layer of Ritz sounds tasty. Actually taste buds change as you age like all of the body. The desire for sweets can still be there but not as overpowering as when younger. All amazing when it's the body telling you what you need more of and less of.

Howdy Kent! I just wanted to let you know That all my relatives that don't like cranberries loved the cranberry salad. I love cranberries myself .I only used a 16 os. bag. That recipe would feed a host of cowboys. They only ate a half of a smaller batch. so I'm sharing with my good neighbor and friend tomorrow. I never made homemade whipped cream before. My mom said don't whip it to long or you will make butter. She said that happened to her. Shoot now I know how to make butter. Thanks Ken, Shan And all the puppy dogs.

Nothing beats a good ole tuna noodle casserole! I add celery, mushrooms and peas to mine along with the onion and mushroom soup. Instead of crumbs, I top with shredded cheese right before its ready to come out! Great hot from the oven, gets better as leftovers. You can sub canned Salmon or Jack Mackerel for a change of pace, just pick out those bones and skin for the cat!

I'm not complaining please understand. The basic tuna casserole recipe of mushroom soup, egg noodles, tuna and peas is packed full of protein(About 20g per serving) and solid overall nutrition. You have some fiber, iron, potassium and calcium there. When you add the bread crumb or cracker crust and other ingredients like cheese the fat goes way up, the carbs go up. It becomes a calorie rich dish.

I make the tuna casserole with a large can of tune drained, 1 can of cream of mushroom soup, soup can full of milk, and 1 standard can of peas drained. Stir those together right in the casserole dish, add salt & pepper to taste. Top with crushed potato chips and bake at 350F for 40-45 minutes!

Good evening Mr. Rollins. I just love tuna casserole and have tried several versions of it. I remember my dad making it with Condensed mushroom soup, mixed veggies, milk, and of course cheese but topped his with Ruffles potato chips. I just made your version and I have to feed 6. It was soooo delicious and it made plenty even for seconds. My family says to write this one down, it's a keeper. Thank you for sharing.

People don't remember the 70s and the early 80s, bread and butter when with your dinner and a little sugar on your bread and butter was your dessert. I'm 51and still remember the cheap but good food we ate. Once a week McDonald's 50cet burger was a treat. God Bless all.

I bake mine in a large casserole dish, I use rotini noodles and add peas and mushroom soup I use shredded cheddar cheese and of course town house crackers crumbled on top. Bake for 45 minutes in 400 degrees. It's scrumptious 😋

I love it! My husband said he married me for my tuna noodle casserole and pumpkin pie. But the first time I made him tuna noodle casserole he said "I like peas in mine and please don't make me hunt for em sweetheart"...lol....since it's the only green vegetable he eats they're goin' in. I always liked the mayonnaise mixed with the tuna them added to the pasta before baking, Better home's and garden Cook book suggested this. This was always a treat to get, when my Mom cooked it, but I've noticed my catholic friends who got this every Friday back in the 60s hate it.
