Being Russian, I'm sceptical multiple times about the USA about many things, but this man and people like him are indeed a national treasure and I'm sure that if the US had more people like you, Sir, we would be friends. I've been to the States, I was there a long time ago, I spent 4 months in Arkansas and I have to say that contrary to what I hear about Southern states from time to time, it's a nice place (we also went on trips to Louisiana and Tennessee) with nice culture and people. Several years ago now I had the pleasure of becoming good friends with a former adversary from the former Soviet Union. Had a war between NATO and the USSR happened it would have been his job in the Russian Airborne to find my unit and take it out, and vice versa. But instead we became great friends and had much respect for one another. Politics and politicians should be outlawed for the good of the human race. How many conflicts could be easily settled with vodka and fried catfish instead of bullets and bombs?

This is the second of two comments. I just finished eating the BEST catfish I’ve ever cooked and had. My wife wouldn’t stop eating it as she said, I’m so full but I’m not stopping until it’s all gone. She kept saying, “this is the best fish you’ve ever cooked. I made this as written with fresh caught catfish. We used the season salt because we didn't have the other spice. I think next time I will play around with a different spice blend (old bay?) A tip a friend of mine told me was to soak the fish in a lemon lime soda like Sprite Sierra mist or 7up for maybe 30 minutes to an hour. It didn't take away from the flavor but it did pull out any muddyness there might be in the fish

Kent and Shannon. I just used this recipe as is with no changes except I didn't have your seasoning so used my NM southwest seasoning. I made this with Alaskan fresh caught halibut and it was excellent. My wife asked me to add it to the go to recipes. I even tried the red potato as well. This is going into my boat recipes as no refrigeration required. I will be the hero after a hard day fishing. As a Eastern New Mexican now living in Alaska your chuck wagon recipes make camp cooking to die for. I don't hunt so well anymore but get invited to cook. Keep those recipes coming.

I cooked a bunch of crappie up for our Trail Life USA group at a camp out in early June. Equal parts self-rising flour, yellow corn meal and parmeasean cheese. Then season the dry mix to taste. Egg wash and fry. It was great and the kids that said, "I don't like fish" tried it and liked it. I put the dry mix in a gallon zip lock bag. Made it way easier to clean up.

Thanx for the tip regarding that black line in farmed catfish, I'll keep it in mind! My grandpa used to bring his catfish home alive and put them in a baby pool and fed them bread for a week.That's how I do it too. It's the best way to get that muddy taste out of wild caught catfish

That looks just like Grandma and Grandpa's golden fried catfish that they used to make and man it made the sound of the crunch for it too and oh my God I bet that was so delicious I can't wait to try that recipe myself thank you so much for showing us this.

Those are some excellent, clean fillets you have there. I'm sure they were delicious. Walleye and Crappie are the kings of all fish though.

Crappie is some of the best fishing around North TX not too mention best eating. Nice white fillet battered fried in some peanut oil in a 12" cast. Boy howdy
