brilliant, but a bit over complicated if you don't have blow torch, just put raw sugar on top and throw it right under the flame in the oven on broil, achieve same effects as blow torch. I personally invested in a $20 torch.

The pre-caramelized sugar melts much more evenly and much faster, so you don't overheat the custard underneath. After trying both, Ben's method was definitely worth the extra effort.

This looks lovely! But I wonder, is there a way to make creme brulee without refined sugar? Like can you substitute honey or other whole food alternatives without changing the chemistry & taste too much?

That creme brûlée didn't set properly because the passion fruit. Tropical fruits have an enzyme that prevent them from setting into custards, you have to heat up the pulp to break it down then add it to your creme or jello or mousse so it sets up properly

Instead of making the caramel, processing it, sprinkling it then grilling. I sprinkle the top of them with caster sugar, then pop them under the grill for a few minutes. Way easier

Top tip for you Ben if you toss the lemon in the microwave for 10 seconds and you get the same amount of juice from one half as there is in the hole lemon just by squeezing them with out x

Creme Brulee is one of the only things i'm any good at baking, though i don't have a cooking torch so i use the builders one from my dads shed, it's a VERY quick process haha. I usually only do classic vanilla though, will have to try passion fruit :)

This method is quite unique. What advantage/ disadvantage does this method have over traditional method, where you heat the cream then temper and slowly mix into the egg yolks prior to baking?

Greetings guys, I am going to try this recipe but instead of passion fruit, I am thinking of going with prickly pears (which in Crete where I am, come in great abundance). Prickly pears have the consistency of passion fruit (seeds) but also have some flesh (like papaya) and taste like persimmons. So I'm thinking my cremes will lack in aroma. Any ideas? Thanks. Yes, I've posted this before and I don't want to be a torment, but can you please make a bread and butter pudding. When I make it I use slices of hot cross buns or panitoni instead of normal bread. I'm just dreadfully curious how I can add another twist to the traditional version to make it taste even better! I'm going to make this creme brûlée soon because it looks absolutely delicious!

When I was a kid, I always wanted to someday make a creme brulee. I hadn't even had one, I just thought they sounded delicious. But this was back in the 90s before the internet made everything accessible, and all the hoity toity cook books said you HAD to have CERAMIC ramekins! Thank goodness those days are over lol

Yay they finally made creme brûlée my favorite. That's a nifty trick with caramel topping but I think it's easier just to purchase one of those mini torches. I'd like to see how to make pine nut cookies, ooh! or almond croissants :)

Hi! How do you know when the creme brûlée is cooked? Cause ben gave a timing range from 25-30 mins and I don't think sticking a skewer in like I do with cakes is gonna work...

i usually make cream brûlée when i make macaroon. i only put the egg yolk into my cream brûlée. so i can have 2 of my favorite dessert at the same time.
