Crab Cake Recipe:
2 small cans crab meat
1 - 2 beaten eggs
1 - 2 tablespoons minced onion
1 teaspoon lemon juice
Salt, pepper, dried dill or parsley to taste
8 crushed cracker crumbs
Drain canned crab meat, place in small mixing bowl, flake with fork into smaller pieces, mix in beaten egg, minced onion, lemon juice, seasonings, and crushed crackers until well blended. Heat oil in large skillet. Turn burner to medium to low heat. Place large spoonfuls of crab mix on hot oil. Form rounded patties with spoon. Brown on each side a few minutes. Remove from heat. Ready to serve.
Garnish with chopped green onion or sweet relish. Top with desired sauce or dressing. I recommend tartar sauce or Thousand Island.
Easy Fried Rice:
Cook 1 boil-in-bag white rice (according to instructions)
Heat 2 tablesppons olive oil in wok or large skillet. Add 1 small chopped onion and saute a few minutes. Turn burner to low. Add 2 beaten eggs and scramble til barely done. Add white rice and desired amount of soy sauce. Mix and stir constantly with onion and scrambled eggs until evenly coated with soy sauce. Remove from heat. Garnish with chopped green onions, shredded carrot and or finely chopped green pepper.
