I have been using my pressure cooker for years. I always brown my meat in the cooker. By doing this all of the fond on the bottom gets added to the layers of flavors that go into the dish. Whether it is beef or chicken or pork, it gets browned in the cooker. Then deglaze with either broth or wine and the onions. Also, if you season the meat at least 30 minutes before you cook you'll get the salt into the meat cells rather than just on top. 20 minutes for the meat and onions, release the pressure, open and add the vegies, seal to pressure again and then remove from heat. That prevents the veggies from turning to mush. Not to try to steal your show, but just some ideas.

Thyme and beef were born to be together...pressure cookers get a bad rap but folks should study them to see just how far they have come in the safety dept...I own an electric and a stove top model and I love them!!

Just some suggestions: You can thicken with instant potatoes(if the stew is too hot you'll end up with little dumplings) or tomato paste. You can also flour the meat prior to browning to get the same thickness.

If you're thinking of getting a pressure cooker make sure the bottom is heavy enough to saute in. Then you can do it all in one pot and it's already hot when it's time to lock the lid. Also the veg add flavor but if you want good chunks of potato or carrot you can instead add them separately after that tough meat is well cooked, as they don't need so long under pressure. Parboil them during the 15 mins then add at the end. Agree, beef is tender! Pressure cookers are amazing. Nice vid!

On a cold winter day, "looks like it's been cookin all day:" , and " will keep you goin' all day." I pressure cook all the time. It takes cheap , tough cuts and makes them 'fork tender'. I saute' right in the pressure cooker, and add the veggies in the order that they cook in. I use the same trick that you use on stainless steel, on cast iron,, to deglaze by adding, not water, but veggies with a lot of water in them like, onion celery, bell pepper, etc., and deglaze my cast iron that way. GR8!!! vid. Couple of questions. I agree with you browning, sauteing veggies & meats? To elevate the two pans why wouldn't you not be able to brown and saute in the pressure cooker pan? All I was going to say was that I do the meat in the pot and brown it there... At the same time I add the other stuff to a pan.. cuts that time down some.. The meat can stay in the pot and you just add everything to it. snap the top on it and go... Nice work.. Some real home cooking .... RR eat your heart out!! None of that 30min meal stuff..

yes, aluminum leaches with acidic like tomatos. stainless steal is best. i watched a vid that rated pressure cookers & concluded that the Fissler Vitaquick 8 quart is the BEST. I just ordered it & hope to try your recipe when i get it. Vhoice Blessings ! In Jesus, Calvin

Stew dates to prehistoric times. In medieval times it's known as pottage or peasant stew. Tough cuts of meat were used since the wealthy prized the tender cuts. Their cooks claimed less desired cuts for themselves & their families. Toughest cuts & bones went to the dogs & swine. Peasants would wrestle the dregs from the dogs, add them to pots of roots & grains that they might've been feasting on for days. Hmmmm, I wonder if Dinty Moore got started that way? LOL!

Ok had to watch it again to catch the "hidden" home brew.. lol. 2 Questions and a comment after watching it again. 1) How long did it actually take of video shooting to get the finished 23 minute video? (my wife loves the bloopers you do). 2) How much is a lapel mic ? I really enjoy your videos. I like @ 19:30 you could see your reflection in the top. I use a crockpot but, it takes 5 hrs for my special chili. 30 minutes is way better. Great job on the video editing and the music is a nice touch too, awesome voice.(-:\> Would you drink wine or beer with that meal? ~CHEERS~ B.Champagne

I'm one of those people. Headaches (actually Migraines) and Heart palpitations both. I can eat it but I get these symptoms when I eat foods that have large amounts of MSG in them. I'm a lot more careful about my intake than I used to be. But people are welcome to believe whatever they want, I just know for myself, It's better to be safe than sorry.

Nice video - only one objection - There's a difference between "Any cut of cheap meat" and quality beef. I constantly try Walmart beef due to the cost, but just as constantly I am disappointed at the flavor... (None). Same cut of beef from Costco give you tremendous flavor to build the spices on...... Yes, both come out tender, but that's just one feature of a good stew - good flavored meat is another.

@CraigTube Realistically, Worcestershire sauce definitely has MSG. Something as innocuous as a tomato has naturally existing MSG... It's not deadly. Asians have been ingesting it in the form of soy sauce for centuries.
