Someone at my church asked me to teach her to make chicken rice soup for her ill husband (I have become known for making/finding really good recipes. I have a knack for picturing what something is going to taste like without trial and error). He is not doing well and this is his favorite soup. I usually make lemon rice myself (which you probably know uses egg to thicken rather than milk and flour). So, I have been looking for a good recipe for this specific soup.. I have spent HOURS looking. I really want to thank you. This looks absolutely amazing. FINALLY one that does not call for bullion cubes (i detest bullion cubes) or soup base (more msg crap). I really want to thank you. I just thought you would like to know, this recipe is going to make a terminally ill man VERY happy. Thank you.

I don't mind MSG it actually has flavor, they use it China like we use salt and pepper, I have learned to not be afraid of it.

To avoid burning the butter while cooking at higher heat you can use olive or any other good oil like grape seed or avocado oils to temper the pan then add your butter. This works very nicely keeping the butter flavor without the risk of burning or caramelizing prematurely. Thanks for the video!

Ha!! I just came back across this after watching it when it first came out seven years ago. The weird thing is, this now the soup I make every Christmas Eve for the family. I save one half of the turkey breast from Thanksgiving and throw it in the freezer and then use it in this soup a month later, in place of the chicken. I brine the Thanksgiving turkey and it is pretty flavorful. The only other changes I make to the original recipe are to use Minute Rice and add half a teaspoon each of rosemary and thyme. It has been a favorite for these past seven years and will continue to be, as far as I can tell.

Looks delicious! Funny, this is almost the way I cook rice soup in Malaysia each time I have diarrhea! I think when one has diarrhea, it is good to eat carrot, potatoes and rice. So I cook them together. Only that I don't use oil and flour at all. I cut onions, celery stalks, bell pepper, garlic, ginger, carrot, potatoes and boil them in water with some dried anchovies (plentiful in Malaysia where I come from). Before that I cook rice separately in a lot of water till rice softens but quite starchy watery. Then I add rice to the boiling vegetables. Then I add salt and sugar to taste. I cook till all vegetables (especially carrot and potato soften). Very delicious. In a normal healthy situation, I'd add crushed black pepper, and sliced red chili . If am not too lazy, I'll boil chicken slices, and cook the vegetables in the chicken stock before adding the rice...

Delicious looking recipe Craig...I enjoyed this video (as my own creamy chicken vegetable and wild rice was simmering away on the stove - just looking around for other ideas, I guess). I have to say, after watching your video, I got up and told my wife that the more I watch youtube, the more I begin to "believe" in people again. You seem like a super nice down to earth guy...someone I could relate with and would likely be happy to call a friend. I wonder where you live. Central Wisconsin here. Anyway, thanks for the great [simple] tips, as well as a couple of genuine laughs (particularly in the end-bloopers)!

Great video, super simple, and your showing folks the basics of cooking - mirepoix (onions, celery, carrots), roux (fat + flour to thicken). I've had the cooking bug for a while, and it's so much better eating healthy foods that you prepare with your own hands!

Looks really yummy. Only thing I so different is I don't do the flour thing. I take the broth n heavy cream n cook it but I take a little out n put it in a cup and mix it with corn starch and mix it so no lumps n I pour it into the pot n its outstanding.. I add broccoli to it n my family goes nuts. When I'm alone I add some roasted peppers n garlic to it n take out the carrots.. Yum

Evaporated milk makes creamy soups taste better than cream. Being from my state we make a lot of chowder and we have always as long as I've been alive and before used evaporated milk. You will see recipes that call for cream heavy cream and whatnot. When I lived in England nobody had had fish chowder before. I was told I could make it every other day if I wanted to!
