I put pink food coloring in the whipped cream frosting. I forgot to do that step in the video, so the frosting is white.

hi Stephanie....I tried making the candied cranberries....I followed the recipe and let the cranberries and sauce sit for sometime but I noticed that the cranberry sauce thickened up...it kinda looks like jam...what can I do to fix it

The whipped cream frosting is originally white. For this picture I added pink food coloring to the whipped cream. So if you prefer a white frosting, just omit the food coloring. Actually in the video, the finished cake is white as I forgot to add the food coloring.

Love everything created but I am not a huge chocolate fan nor could I possibly eat most of the cakes made just too much of everything. I am more of a stollen, cream puff, cheese cake, danish person. My favorite cake is strawberry shortcake not bisquik a real vanilla cake with loads of whipping cream. Give me a wonderful fruit tart! Can you make a strawberry shortcake cream on top cake? I havent made one for years! I usually am the one who scrapes off icing except for pepperidge farm or sara lee that I will eat. Dont hate me!

What is the texture of the candied cranberries? Like maraschino cherries? I just baked a batch of cranberries-coconut-chocolate chip cookies and the combination of tart with the chocolate was sublime so I'm anticipating a delicious and sublime cake too!!!! Thanks!

I made this cake and it was so Amazing. Such a lovely recipe. We don't get fresh cranberries here, so I did the same process with dried cranberries. And my family enjoyed it. I made the same recipe of Genoise and made a pineapple cake with wipped cream. It was loved by all. Love to you from Goa.

nancy bumia you could probably substitute canned cherries (not the marachino cherries in the jar!) instead! But usually, you find the fresh cranberries in the produce area and they come in a clear plastic bag; not loose. Ocean Spray is a good brand! Hope this helps! Merry Christmas 🎄

This cake looks absolutely wonderful! However, I personally don't like cranberries that much and would love to try it with cherries instead. Would the process to make the candied cranberries work just the same for cherries? I would really appreciate it if you let me know Stephanie! I think I'll definitely try this one for Christmas! :)

You could use bottled morello cherries, like a Black Forest Cake. You wouldn't need to candy them, as they are already soft and sweet.

wish I could do this like you did , looks already delicious just by the look of it and I would not even dare to cut it haha , now , I've tried this one myself but after not one but even TWO attempts I keep having something very ugly ! I mean it sort of falls totally flat , apart , how to put this ? well it comes as a bread that did not rize up in the oven, if you know what I mean ? (excuse my english! ) it just stays low and has hard chunks on it so what did go wrong is what I keep asking myself :( , now I'm watching this one AGAIN and I keep rewinding ALL of your steps multiple times and I just can not see what I did wrong , can I get some help here please ?? Stephanie , I really do the best I can and for sure it can not be your fault because i have already seen numerous videos of you and you know how to bake like a pro , that is just a fact not to denie at all but I'm trying here to be able to get that same thing with looks alike instead of some kind of puddingbread-ish things as I just like to present some delish when I got visitors too , now all I can do is buy some chocolate , cookies and sometimes cakes like these instead of making them at home , I feel , yes , it is as if I'm a complete failure after trying and failing and it's not only about taste and diy but I'd like to feel good about myself again too ... even my kid can bake without just any issue at all , she then , as she is a kid makes fun out of mum which normally makes me laugh as well , just not in the case of " bake a simple cookie -epic fail , bake the most easy pie -epic fail -bake-just failure-don't even think about it ??? kind regards out of a warm home yet we like a warm oven too :-)

You could use a smaller pan. Not sure of the baking time, but it would be a few minutes longer.

I found this recipe in the Honolulu Newspaper about 35 years ago, and it was great. Lost it, and am glad to find your version, but I loved it with the original homemade whipped creme fraiche topping.

In the video I forgot to add the pink food coloring. So if you want to color the frosting, add some food coloring to the whipped cream frosting when you add the cranberry syrup.

After you have steamed the cranberries in the sugar syrup, take it off the heat, and let sit at room temperature (covered) for about 4 days. After that, if not using right away, you can refrigerate the berries for a couple of weeks.
