After seasoning my steaks properly I can't go back to unseasoned. That said, I do prefer the pan method over grilling. Both have their merits and losing the grill marks is unfortunate, but you have far more control over the tenderness and keeping it moist in a pan.

@@perrycarters3113 I know this sounds retarded, but but dad has a cast iron pan he welded a grill grate into for the sole reason of searing grill marks onto stuff. Its fucking hilarious when friends come and see it since I'm the only person I know with a Pan like this.

@Sun Wukung Yes..the dairy cows that created the milk that made the butter fed on grass fields..which is much healthier than feeding cows grains. Grass fed cows have meat and milk that is full of healthy Omega 3 acids. Grain fed cows do not.

@Sun Wukung It will be on the label. Normally cows are fed grains because grains fatten them up very quickly and is a cheap food source. Grass fed cows are leaner and take longer to grow. Because of this grass fed beef is considered a "premium" product and is more expensive than regular beef. Organic means the animal was not given hormones, antibiotics or man-made pesticides in its feed. The feed, however, is not necessarily grass but corn and soy. Grass fed meat is different in that the animal was pasture-raised. Note that grass fed often is organic, but organic is not necessarily grass fed. If the label doesn't say they were grass fed it is safe to assume they were grain fed. I have cut my beef eating way down..but when I do eat it..I try to make sure it is grass fed. Are you in the USA? Hope this helps you my friend.

I fully agree with Wayne but I salt and pepper it while it’s coming to room temp cook for 6 minutes in a cast iron pan with some olive oil flip every minute for the good sear hit with a slice of butter let sit for 5 mins down the hatch nice and medium rare

general rule for fast dinning restaurants, MR to M, a good line cook will at least give you the fresher cut of of beef, anyone who orders W will probably get a older cut. it makes sense to a cook, because A. he doesn't want to give anyone food poisoning, B it makes more sense food cost wise, and C. if your're ordering a well done steak anyway, you won't be able taste that hockey puck , and you haven't been given food poisoning. borrowing alot from the 'great one' in restaurant life - Anthoney Bourdain

Gods no, I S&P my steaks liberally. Wayne was absolutely in the right here for seasoning and resting, although Dan is right about the ideal cooking method. There are some purists, like Daryl, who think you use seasoning to improve lower quality steaks while higher quality doesn't need the help, but I disagree.

Squirrelly-Dan is correct. Pan sear. About 4 minutes per side (on a fairly thick steak). Finish in the oven. Only kosher salt for me though. After the oven-run, let sit for several minutes with a pat of butter melting on the steak. Works every time. Ribeye and Filet Mignon are the best. Don't even argue with me on that one, or I will strike you. 🙃

Reverse sear. Look it up, one side of the grill hot, one cold. Bring them up to 110-120 on the cool side, finish it to desired temp on the hot side. No reason to even bring it to room temperature 1st. You can even toss some cherry wood in the coals while it’s coming to searing temp and get some Smokey flavor in that steak.

I have to agree with the S&P part and I'd flip them 4 times, total grill time 7 to 8 minutes tops. Grill marks are ok, but not going to affect the flavor or how moist they are. Steaks like to sweat the moisture out and if you flip more, you reset the gravity of it so it maintains the moisture evenly. Charcoal grill at 300-350. Rare to medium rare. Put steaks on, close lid, wait till temp gets up to 350 ish, open and flip, close lid again and wait until the temp gets back to 350 again and open flip. Repeat 4 times total and then pull them off. Juices should run clear with a touch of red. Let sit for 3-5 minutes before you CONSUME.

Well room temperature is preferable ... flip once... I think. Pepper it raw and salt to taste when you eat it....salt draws out the moisture and drys it out OnThe grill

Salt before to draw out the moisture in the beef. Less moisture in the beef= more concentrated beefy flavor. The only reason why a steak my be dry is because there's not enough fat within the meat itself.
