There are some creatures that only come out at night, and at night fish are generally easier to catch since they're more or less asleep. Certain fish only come out at night so yes, some fishermen and fisherwomen go fishing at night.

Love your videos! They have inspired me to go hunting and fishing in the U.S. My wife and I ate a green turban at a BBQ place in Tokyo. It was OK, but we did not like the liver part:)
