Thanks for this. My CC frosting is always way too runny and I could never figure out why. Perhaps as you said, I mixed it too much, but I find even if I sift the powdered sugar, there can sometimes be bits of it. It seems like such a simple thing, but somehow I haven't gotten it right yet. *sigh*. I end up just putting it between the layers with and IMBC dam...lol

I have found adding cream cheese last straight from the fridge helps give a firmer frosting as it sort of solidifies the butter. (UK)

You know what I have found that actually helps is to add the cream cheese last straight from the fridge rather then room temperature. Adding cold cream cheese helps because it sort of solidifies the butter making the frosting firmer.

Hi Sharon! Yes, more sugar will make the icing thicker but will also make it sweeter. As Aja suggested, adding cream cheese right at the end works well to get a good consistency for icing and piping

How to store red velvet cake after piping for customer to pick up, in freezer or fridge?

I would store it in the fridge to keep the frosting as firm as possible, so that it resists the vibrations and movements of the car during transport. I would tell the customer to store it in the fridge but to take it out of the fridge 2-4 hours before serving it, so that the cake and frosting warm up to room temperature and soften and that's when it will taste the best!

Hi! When you say it’s not smooth, do you mean it’s lumpy (with lumps of powdered sugar or cream cheese) or does it have air bubbles in it?

Hi! You can either add a bit more butter and sugar to stiffen the icing, which will make it sweeter but also more stable, or you can take the cream cheese out of the fridge just before making this and add it at the end instead of the beginning.

I want to make a cream cheese frosting for the first time but here in Switzerland we only have spreadable cream cheese (like Philadelphia in a tube), and not cream cheese in a block. Isn't there any way to make it work?😢

Yes! Take the cream cheese out of the fridge just before using it so it's firmer and add it to the recipe last instead of at the beginning.

The only thing you missed is how to keep yourself from eating any extra cream cheese frosting with a spoon. I've never had leftover cream cheese frosting to store -- it's too yummy to resist. Great video.

You can make them bigger! Sorry there are a few steps though: - After you click PRINT RECIPE in the turquoise recipe box, click OPTIONS at the top - For the text size choose LARGE. I hope that helps :)
