Many years back we had a milk cow that produced 3 gallons of milk per day. We skimmed the cream for butter making, and drink some of the rest. There were not many people in our rural area who wanted fresh milk, so within one week I would have 10 gallons of milk saved up to make cheese. Every Tuesday I would begin at 5:00 AM To make cheese, using a 20 gallon stainless steel kettle over two burners on a gas stove. The process took all day, with a good part of the process being taken up by waiting after each step. I would finish around 5:30 PM with the last step of putting the cheese, in cheesecloth, into a homemade press to finish drawing off the last of the liquid. It would make about eight pounds of cheese, which would age then be put into the freezer for later use. It was a delicious cheese. We miss it.

I've been making cheese at home for a good few years now and it's well worth the effort. In the UK, salt does not contain iodine and the usual supermarket table salt works just fine in my experience. Most recipes are for an American audience and their salt is iodised. The sodium ferrocyanide anti-caking ingredient used in the UK has never been an issue for me. Even with 2 year aged hard cheeses. As for the milk, unhomogonised is a premium product. I've found that if you buy skimmed (red top) milk and whisk in double cream then that works just as well. 4 litres of milk and 300g double cream gives just as good a yield as the expensive stuff. But do not use UHT, it just won't work!

Table salt contains anti-caking agent. Everyone should avoid that. If a person has the option they should use pure sea salt. Just SALT, no additives!

Without owning a cow, finding raw cow’s milk here in the US is next to impossible as is unhomogenized milk.

Depends on where you live. I'm in Missouri and we have 7 dairy farms just outside my city. Raw milk is easy to get.

Health food stores- the mom & pop kind usually sell raw milks and cheeses here in the states...

Check the laws for raw milk in your state. Often if you can find a small farm with dairy cows they may be able to sell it, or maybe trade. I believe raw milk can’t be transported for sale across state lines. Some natural food stores carry raw milk in some states. Hope you’re able to find some you like.😊

Where I live, Oregon, there are a lot of restrictions on the sale of raw milk. Cannot be sold retail, not even at farmers markets, commercial dairy’s can’t sell it. Only small herd owners can sell raw milk & it must be picked up from the farm. Last I heard a small herd was really small, under 5 or something like that.

1kg cream cheese, work/time and kit aside=what's the cost you, ie how much for the milk? just curious I'm guessing a gallon of whole milk is about 5lb-10lb, $10-15USD :O that is more than a bargain! and the good stuff...mmmmm...mmm nice one John-

Great stuff John. With your experience with yeast/fermentation, would you consider a beer brewing video? Something like a Belgian Saison? It can be fermented at regular room temp and is fairly easy for beginners, lovely refreshing beer. Made by Belgian farmers back in the day for a refreshment while working the fields.

A nice cream cheese recipe from yogurt. Make 1 litre of whole milk yogurt. Mix in 1 TSP of herbes de Provence and 1 TSP salt and 1/2 TSP of garlic salt.. Mix. Then strain through cheesecloth/muslin until getting crumbly. It's lovely. A bit like Boursin.

Oh, this looks lovely. Looking forward to more. Also, what can we do with the whey? (I know there's such a thing as whey cheese...) If your frozen cream cheese separates -- just let it warm up and whisk it back to smooth. And try it instead of butter on a peanut butter sandwich!!

Growing up on a farm we knew that for making anything that required cream, whether cheese, whipped cream etc that whole Jersey Milk was the best. We even had a Delaval cream separator which produced the best cream from Jersey cows. It was thick and had a yellow color. Homemade Ice Cream and whipped cream was the best. People just don't know that the best food comes right from the farm.

I did use a couple of cubes once, that were about a year old Bob, and they were fine, but to be on the safe side, I would give them 6 months before replacing them, as they are very cheap to make buddy. John, this kit seems like a great solution for soft cheese. Previously I have been attempting to make soft cheese with Kefir. It just never did well and I don't care for the sharpness which can overrun other flavors. Thanks for your education!

A few years back I was fortunate enough to have a friend with a herd of dairy goats...she gave me a lot of surplus milk, and I learned how to make cream cheese and mozzarella...you are correct, NOTHING beats the flavor of homemade!

I am ready to make my own cream cheese! Going to try this week. Also in other news, the goat shed and fence are complete and the goats will be home sometimes next week I hope! So next will be the goat cheese and soap. Can I request a bagel video? :) I have made them a couple of times before using other recipes and they were okay. I just know yours would be the best!
