Ingredients Pastry
300g / 10½oz Plain or all purpose flour
100g / 3½oz Cold water
150g / 5¼oz Cold butter
1tsp / 6g Table salt or 1½tsp / 6g kosher salt
Ingredients for the egg mixture for both quiches
8 Large eggs
300g or mls / 10½oz Single cream
100g or mls / 3½oz Milk full or half fat
½tsp Salt
½tsp Ground black pepper
Ingredients for the quiche Lorraine
60g / 2oz Mature grated cheddar or gruyere cheese
120g / 4oz or 8 Rashers of smoked or unsmoked streaky bacon
100g / 3½oz of diced boiled ham
Half the egg mixture I made earlier
Ingredients for the Salmon and Broccoli quiche
175g / 6oz Tinned or fresh skinless and boneless salmon
100g / 3½oz Broccoli florets
60g / 2oz Mature cheddar cheese
Half the egg mixture I made earlier

My tongue is hanging out! I'm a Sunderland girl myself and grow up on all of your recipes. I'm retired now and still make most of them. Thank you for the nostalgia! *Where I live, I can't get British brown sauce, so I make my own! You can't eat comfort meat and veg without it!

I made two variations: ham with onions, tomatoes, and cheese; and mushrooms with spinach. Used smoked Gouda in both. We’ve been living on quiche for the past two days. Delicious! Thanks for showing us how.😊

Ayup lad, I have made 3 of the quiche Lorraines, no flour at the shops, so I had to use shop bought pastry, just out of the oven, and the smell is devine!, One for the neighbor, and bro, in law, and you are right, the job satisfaction is very rewarding, letting them cool, and anticipating the plate turnover trick!, Happy days 🎉 pal, and keep safe.

Turned out fantastic! I even mistakenly placed all of the cheese in the Loraine, then had to grate 2 additional ounces for the Salmon/ broccoli and they both turned out fine. Thanks John.

Just cooked the Lorraine. Came out delicious. Wonderful pastry. And the filling was really nice. Far better than any shop bought. I've never cooked one before because all recipes I've seen required blind baking. I've got the salmon and brocolli to try that one next!

Again John, an outstanding work. I learn something new on every one of your videos. They are not only educational but entertaining. Not dry at all. Just a note, this past weekend I took your sourdough bread to a family reunion held at the out door shelter and fellowship area of the church that I grew up in at Friendship Baptist Church, Friendship, Virginia. There was none left to take back home. All my cousins ate it up or took a slice home with them. That is a high complement with those females since it is stiff competition with what is brought to church socials, homecomings, and family reunions.

I have these in the oven right now. I wanted to say that I utilized your food processor method for the pastery last evening. I am very impressed with the appearance and feel of the dough today. My mouth is watering! The thing about quiches is that they are so versatile- you can put any combo of fillings in so long as your egg mixture and cheese ratios stay the same

Your salmon & broccoli quiche recipe is excellent. I cooked it in a Lakeland Perfobake loose based perforated quiche tin which helps the pastry cook right through.

Just found your channel and love the easy home style cooking, and clear instructions. I love your kitchen, your range/stove is amazing I miss our old gas cooker. Your pots and utensils are new and shiny. looking forward to discovering more of your wonderful recipes. I work all day and Hubby retired likes to cook, but he uses the high eat and wrecks the frying pans.

We blind bake also after wards its cooled we brush with mustard and we blanch the broccoli for 1 min then ice water then drain well . Also smoked haddock works great nice with water cress salad . Really enjoy watching work great dishes too . Caramelised red onions and goats cheese is nice

Those quiches look absolutely delicious! I have been making a few lately, but never thought of a salmon and broccoli one. Mouth watering! Your such a good teacher , as the poster below says. I made the quiche Lorraine today . I added a green chill with the spring onions .i also put some halved cherry tomatoes. And used sour cream as I already some in . Absolutely delicious. Congratulations on another fantastic recipe. Keep up the good work John 🤘🏻😎🤘🏻

I made the two quiches tonight and they both turned out lovely. First time I have made short crust pastry in years always just brought it. Won't be from now on it is so so easy thanks so much. Great tip about letting the bottom dry out on the pastry , well impressed.

Hello John, As I told you yesterday, today I have just finished eating a slice of respective quiche together with jacket potatoes and fresh tomatoes and lettuce as per your presentation. May I tell you they are fantastic. I used the fresh salmon in accordance with your suggestion and it came perfect. My wife congratulated me for both quiches. I owe it to you for your fine recipes and step-by-step instruction. I definitely recommend your videos to anyone with little or no experience of cooking to try these mouth-watering quiches as they are wonderful. John, yet another mouth-watering episode. Thank you! I am dreaming about quiches with: smoked oysters, bacon, and leeks; mussels, bacon, and chives; etc. Needless to say, the shellfish must not be overcooked so that it becomes rubbery.
