This delicious homemade cream of mushroom soup is loaded with mushrooms and is quick to make. My kids and husband love lots of mushrooms...
Ingredients:
4 tablespoons butter
2 tablespoons oil
2 onions, diced
4 cloves garlic, minced
500g mushrooms
1 tablespoon chopped parsley
6 tablespoons flour
4 cups water (600ml)
1-2 teaspoons salt, adjust to taste
1 teaspoon black pepper, crushed, adjust to taste
1 cup cream (200ml)
1 tablespoon parsley, freshly chopped, for serving
1 tablespoon chopped fresh dill, for serving
Preparation:
In a large saucepan, heat olive oil and butter over medium heat until melted.
Sauté onion for 2 to 3 minutes until softened.
Cook garlic until fragrant, about 1 minute.
Add mushrooms and 1 tablespoon parsley, cook for 5 minutes.
Add flour, mix well and cook for 2 minutes.
Add water, mix again and bring to a boil.
Reduce heat to low, season with salt and pepper.
Cover and cook for 10-15 minutes, stirring occasionally, until thickened.
Reduce heat, add cream.
(1.5 cups of vegan cream should be added for vegans.)
Let simmer gently (do not boil).
Adjust salt and pepper to taste.
Stir in dill and remaining parsley.
Add more salt and Cover and let rest for 5 minutes.
Serve hot.
