Have seen many tutorials for cream puffs, this is the first using this method. Most of the recipes add the flour to the milk/water/butter once the mixture has come to a boil. Taking off the heat while adding flour then returning to the stove, mixing until dough forms a ball. Interesting must try this method soon. Thanks.

Cream puff and Eclair recipes can be very tricky until you master the dough and your oven. You can try reducing your heat to 180F and see if that helps so they don't burn. They will always have a little undercooked dough in them. For large or medium cream puffs you can cut them in half and remove the undercooked dough. Yes practice makes perfect that's for sure.

Hi Nadia, during your video you mentioned to go on your website to find the chocolate cream custard but I searched for it and couldn't find it?!?

Hi, how did your final product look after coming out of the oven? Were they flat so you could not add any filling to them? Or did they look fine and were fillable? If they totally went flat going into the oven the eggs added were too many. So try adding only 2 eggs instead of 3 eggs. That will make a difference. Let me know how your next batch turns out. Massa Chusset Massa - perhaps you are not able to see the description on the youtube page that shows the recipe. Here it is again. Ingredients: 175ml (3/4 cup) milk 75ml (a little more than 1/4 cup) water 4 oz (113 grams) butter 5.3 oz *150 grams) flour 3 eggs (+1 more egg for glazing the cream puff batter) 1 tablespoon sugar Pinch of salt Materials: Half sheet tray, silpat or parchment paper, pastry bag, pastry tip, pastry brush, spatula, small pot, whisk, mixer, flat beater mixing head

Hi, Nadia I love this video. I have tried and the consistency didn't turn out like yours. I added more flour (75grams more) and the consistency looked like yours but after baking in the oven 400 degree for 35 minutes, It was like a cookie. Maybe a little bigger than a cookie. I cut the top of it and it wasn't hollowed like yours. It was like a cake. What did I do wrong? can you help me?

sorry for the late reply. you should not alter the ingredients. most likely your oven temp was not accurate or you did not pre-heat it enough. try again if you like and make sure to follow the exact steps and ingredients.

Did you add the eggs ONE AT A TIME, MIXING AFTER EACH ADDITION. If you don't do it exactly this way - they won't turn out right.

Cream puffs and eclairs will have a little bit of doughy texture which some people really like, and if you don't simply remove it, it's easy since its not that doughy.

Hi there I just discovered your channel. You have great recipes. Just saying these look wonderful, but you should have reduced your oven temp to 350 after baking them for 10 mins and bake a further 15-20 mins at 350. That's why they were doughy.
