Ingredients;
For caramel;
1/4 cup sugar
2 tbsps water
4 whole eggs
200ml coconut milk
1/2 cup coconut condensed milk
1/4 tsp vanilla
*can be bake steam or bain-marie method

Homemade 2 cups coconut milk 150g sugar Once all of the sugar has dissolved bring the mix to a simmer over low/medium heat. Do not stir once the mix starts to simmer otherwise it can crack and crystalize Gently simmer for roughly 30- 40 minutes, or until the milk has darkened to an almost grey color,has reduced by half and thickened (After about 15 minutes, you'll notice that the milk will start to turn dark and thicken - that's ok and is exactly what's supposed to happen

Why does flan need condensed milk or just milk in general? I'm trying to learn all the science behind flan. I can't find anywhere online that tells me why milk is an essential ingredient.

You can replace condensed milk with sugar or any sweetener. Milk make the flan extra creamy.
