Oh my goodness, this is a great recipe. I added a fire roasted chopped poblano pepper, when sauting the diced onion, and also added some cooked, cubed chicken breasts to it right after the cojita. It was a delicious dinner. Thank you for sharing.

My new fave long pasta (for traditional spaghetti) is Banza bc it's made out of 100% garbanzo beans (aka chickpea or ceci bean) so much lower carbs. Thanks for the recipe. Will try it soon. Also, honorable mention to store brand vegetable pasta. It's just that no-one where I now reside has any spaghetti noodle type pasta in that category on their shelves.

This looks great and I'm making it for sure! On pasta: I use De Cecco No. 12. It's bronze drawn and holds sauce better. La Molisana and Rao's are also good.

I used Barilla for quite a while, but have recently gone over to Rao’s. A bit pricier, but the pasta is definitely better. Bronze die extruded and slow dried, very good stuff!

Our family is loving the “Priano”” brand pasta from Aldi it’s imported from Italy. They carry different cuts and various tortellini in the brand at my Aldi. It’s really good and doesn’t feel heavy in the belly like some pasta. I’ll definitely be trying this recipe with the Priano rigatoni I have! Thanks for another great one! ❤

De Checco pasta is a good value for un upgrade to a better pasta than normal brands you see in the grocery store, obviously not the best. But a better pasta with a good value. You probably have seen it...the blue box.

Fresh Homemade Pasta is the best, but Buitoni Pasta is already made and cut to Spaghetti, Fettuccini, Linguine or Angel Hair and it's in your Market's Cooler along with their Fresh Ravioli, Tortellini, Pesto and Alfredo sauces, by far better than dried Pasta and the pasta water has way more starch so it makes a smoother sauce when you add a couple spoonfuls to thicken your sauces.

I'm gonna make this with the De Cecco Egg Pappardelle that I have in the pantry. I'm very partial to De Cecco egg pastas, so their egg fettuccini and their egg lasagna are also go to staples for me. I like Barilla Campanelle or shells for pasta salads, but more often than not, I'll spend my carb indulgences on egg pasta, even when I go all out and make it myself🍜

For an easily accessible pasta, in Houston at least, De Cecco. There are better brands available. Look for a pale yellow pasta (paler than De Cecco) with a coarse outer texture. if they don't bother to put a window in so you can see what you are buying, just skip that brand altogether. I learned a lot watching a KZbin video by a guy named Alex. He's a French guy and he's cooking. Lol

The heat might be too high, try adding little cheese at a time and mix. Also, what kind of dairy are you using?

@@Viewsontheroad I made a dish with Parmesan on Sunday and tried adding a little bit at a time. It did work much better. I’m assuming the cheese is cow dairy. Is there other variations of Parmesan? Thanks for getting back to me much appreciated. I’ll probably just sprinkle the cheese once the food is plated and not “stir” it in.

I go with freshly grated Parmesan and it’s the Kirkland brand from Costco! And you’re right, I’ve had issues with some brands and in that case I had to do just a sprinkle when the food is done!!
