Lovely dish! Thank you, Jamie, for another great vegetarian dish. Pasta with beans and peas in a tomatoe sauce also tastes good, and I hope you'll feature it someday. In Sicily, they do a baked pasta dish with peas and a bolognese type sauce. That dish in a veggie version would also be great.

yes, I appreciate that maybe 20% of his recipes are vegetarian, higher than for most chefs not explicitly promoting vegetarian and vegan recipes. He does cheat sometimes, however, such as using parmesan here (not vegetarian, animal rennet traditionally, though vegetarian versions can be found).

Jamie, I appreciate your recent focus on affordability and price, but you have missed the mark completely here. Lasagna noodles cost about twice per pound as any other pasta shape and for the same semolina and water ingredients (and egg in this case). You tear up the lasagna sheets anyway and thus ultimately the resulting shape is not significant different from most any wide egg noodle. Use pappardelle, for example, and cut the cost per dish significantly. You will need to cut them into shorter bits to mimic the torn sheet segments, but that is no less work than tearing up lasagna sheets.

Italian cuisine definitely includes peas. Pasta with beans and peas in a tomatoe sauce is a very old dish that many Italians grew up with, especially if they had a garden.
