Good Day Chef 🇺🇦🧑🍳. For my taste I would have stopped at the carrots. All those herbs with the onions and garlic seems like they would overpower the sweetness of the pumpkin, apple and fennel. I understand that aluminum foil is not healthy at all when used in the oven at high temperatures

It's perfectly safe at high temperatures; it's made for the oven. I would be more careful with acidic foods, like tomatoes or vinegar.
