We tried this recipe with my mother-in-law and it was delicious, but the cake was densed and heavy. Any suggestions of what happen? We love the icing. We’re gonna do it next time with a yellow cake 😅

Hi! I'm so happy you enjoyed the cake! This specific cake is a little on the heavier side because of the mascarpone cheese. You can use the frosting with my other cake recipes. I also have vanilla cake layer and sponge cake layer recipes :)

I love jellyroll cakes. And they are fun to make. Instead of a rack, I use a second sheet pan to flip. I also dust the towel just in case it decides to stick. I specifically sought you down knowing you would have some fabulous strawberry recipes for this Spring's harvest.

Love this recipe. I do not use worcester sauce (that stuff smells like shoe polish) I use organic liquid amino. Thank you for sharing!

Hi! I typically do about 16 to 18 minutes per pound for medium doneness, so a little over 2 hours. I recommend checking with a meat thermometer and cooking to your desired level of doneness. Enjoy!

I usually do it that way; plus, I add wine to my lamb roast and place a layer of onions on the bottom with the potatoes, and you're right-it's divine in both smell and flavor!

Most extracts are alcohol based. It's a very small amount that you're adding though so it doesn't affect the recipe.

Just a tip since you don’t like the texture of the zest (I don’t either) zest the lemon’s, juice them, add zest to lemon juice , let zest sit in the juice overnight in the fridge! Strain it before cooking! The zest is where most of the lemon flavor comes from! Makes a really big difference!

Made this recipe 2x. I’m planning on using this to fill a lemon ricotta cake. The first time I used a stainless steel pot and a silicone spatula. Tasted delish but had a strong eggy aftertaste. Second batch I used a glass bowl and did the double boiler method. Also cooked it a bit longer. It again tastes great but had a slight eggy aftertaste again. This is after using a ton of extract (2 tbsp vanilla and lemon). Next time I’ll try to follow a different recipe with less eggs.

Hi! I'm sorry the recipe didn't work out well for you. It's KEY to whisk the eggs and sugar together until the mixture ribbons. This will help combat the flavor the eggs. Also, make sure to use freshly squeezed lemon juice as this will further help with the flavor.
