All the cheese needs to do is melt however it’s also adding a thickness to the soup which can cause it to start sticking to the bottom and even in a nonstick pan it can cause the bottom to become too brown. Thanks!

No. Sour cream is a topping. You need a ** liquid ** to make soup. Serve the soup in a bowl, then top with a little bit of sour cream.

I would chop the broccoli into bite-sized pieces. Always use fresh broccoli, never frozen. Fresh has a better texture for soup. I also suggest waiting to top with bacon until AFTER you have put the soup in a bowl. Don't bacon up the whole pot. The bacon will end up chewy and will be gross the next day.
