My husband & I made this soup exactly as instructed, doubled the batch, & it was AMAZING!!! Just like Panera & we are pretty judgy with duplicate recipes. (I scoured 15 other “dupe” recipes & this was the best!) If you want as close to Panera you really need to make this.

I found a "copycat" recipe for Panera broccoli cheddar soup a few years ago, and have made it many times with great success. However, the recipe I have doesn't call for Dijon, hot sauce, or Velveeta, and it has nutmeg added at the end. The only change I make to it is a small amount of freshly squeezed lemon juice (about 1 tsp.) after the nutmeg. It's very yummy.

I agree. I like to add a bit of Knorr’s chicken bouillon powder as well. I also use ground English mustard instead of the Dijon.

I just watched a clip about one slice of Velveeta will help stop the cheese from separating when using real cheese. I have not tried it yet.

You say that Panera Bread is not cheap, and you are 100% correct. But I think the cost of the items to make your homemade soup will exceed the Panera Bread cost. The cost of the Velvetta cheese these days is insane.

Panera is “expensive?” Yikes. I don’t frequent Panera as their customer service sucks. My local Target sells Panera-brand soups but I find they are always under seasoned. So, this recipe is gonna come in handy now that winter’s a-coming. 👍
