Boiled cauliflower also works. I buy frozen cauliflower at Walmart for about $1 per bag. Even creamier if you add some chunks of peeled potatoes boiled in the same pot along with the cauliflower. High speed blender does the trick after it’s boiled. Super creamy sauce.

@@starrpeabody9071 You could make a roux with equal parts oil, or vegan butter, and flour. Add whichever plant milk and seasonings you prefer and the sauce will thicken as you cook it. That's basically the typical ways it's made with vegan ingredients subbed in. Works just as well. You could also use vegan cream cheese as the base for a sauce. There's a ton of recipes online!

This is hands down the BEST vegan creamy pasta sauce! I sauté the minced garlic prior to adding it to the blender and it adds so much more flavor (you can also roast a bulb of garlic in the oven) I eat this all the time it’s soo good 😫

I just tried this! It was so good! I'm not vegan but I love to make vegan recipes and this was surprisingly creamy and pretty cheesy-tasting, pretty close to the real thing! I saw someone in the comments say they used 1 cup of pasta water instead of plain water so I did that + used a little more garlic!

I do mine with tofu!! Of course a little more expensive than potato but my husband and I are obsessed. Add some spinach and mushrooms and a beyond sausage or two if we have them on hand 10/10

I'm from the states but am currently living in a small city in Ecuador as an English teacher. Eating vegan is very easy where I live however access to things like beyond meat patties, vegan desserts and other things is really hard to come by. I love pasta and a creamy vegan sauce is something I can never find here. I've made some from scratch using almond milk but it's not the same. However, I can find all these ingredients in bigger cities and I can't wait to try this out soon. Thank you so so much Rose!

I have tried this recipie but I've added other things like coconut milk (8 oz can), Italian seasoning and turmeric. turns into a gorgeous sauce. Italian seasoning and tumeric I add a table spoon of both into the sauce and it makes it so delicious. I love this recipe for it's flexibility and the ability to add what ever I feel is needed to make it that much more delicious for me and my family.

Sooo this right here is the bomb- I just finished making it not too long ago. I’m just waiting for the fam to be settled so we can dig in but like I’m in love with this sauce 😭💕. I did change it up a bit yk. For the sauce itself It’s the same as her’s with the addition of the pasta water (for that flavor and extra thickness) and coconut milk because I was getting too much cashew flavor. I didn’t have any nutritional yeast on hand so that could have been also why. Oh- I also added cauliflower for an extra boost of creaminess and vegetables! As to mixing both pasta and sauce I made a sofrito first. Meaning i started with a base of green onions, mushrooms, and ginger with olive oil and waited for each to become tender before adding in the next. I sprinkled some Italian seasoning I had and then included the sauce. Giving it a while to soak up the extra flavor before mixing it with the pasta. At the end I ended up with dinner for like 4 nights and a favorite recipe 🧚♀️✨

man that veggie better than bouillon is GOLD I put it in everything and just makes everything taste instantly amazing. Even "traditional" alfredo sauce recipes don't include stock and it's a MISTAKE Do you every try non-dairy milk to thin it out? Soy milk tastes too strong in sauces to me, but almond milk has never given me issue

What pasta do you use that doesn’t have eggs in it? You can also save time on the cashews if you just put them in a Ziploc bag lay them on your counter and break them up with the side of a hammer. Hold the hammer on its flat side and just pound on the nuts that are in the bag and they will break up into small pieces and then you can put them in your blender and blend them up. Well that is what I do anyway. I have a vita mix, but a regular blender might be OK if you just break them up into small pieces like I do. Then you don’t have to boil anything and it only takes a couple minutes

If you want to boost it, mince your garlic, stir them around a hot pan with olive oil, then dunk all that garlicky goodness onto the blender with the cashews. Once you do that, THEN you're ready to pour it over your pasta.

[2-20-2021; 1:13am] Just finished a plate of fettuccine pasta with the Creamy Vegan Alfredo from this recipe. What I noticed: 1. The ingredients used creates a strong aroma, yet the sauce tasted bland prior to adding a touch of salt. 2. Strangely, adding a touch of salt made the other seasonings come alive and more tasteful. 3. Using water when blending the ingredients with the blender seemed okay but when pouring the sauce over the pasta and heating the sauce up, the consistency became a bit thick and I had to keep adding water, even on low simmer. *(For the next batch, I'm going to experiment and add 1 cup of Almond Milk, instead of water, when blending with the blender. Instead of heating the sauce with the pasta, I'm going to heat the sauce separately, on low simmer, and hopefully the sauce won't over thicken using the Almond Milk. I'm also going to add diced onions, tomatoes and green bell peppers to the pasta to spice up the flavor. Wish me luck because I'm very new to following recipes and I'm really out of my comfort zone when it comes to cooking and cooking dishes I've never cooked before. ✌️😉👍)*

Good luck! A couple people in the comments suggested using white beans or cauliflower. One person also suggested using the salted pasta water to help thicken up the sauce but clearly you don't want a thicker sauce. Maybe a combination of using cauliflower and pasta water would be better? I've never tried this recipe myself but since white beans and cauliflower are so much cheaper than cashews, I might go to the store today and give it a try.

@@suicune2001 Thanks. Although I did come up with a personal recipe about 4 to 5 days after posting my original comment and it is very tasty! I did not use any of the ingredients in the video about except the Cashews. The rest of the ingredients are what I felt would work AND THEY DID! 😲😄 My Vegan Alfredo Pasta Sauce only needs 6 ingredients and no cauliflower, white beans or pasta water is needed to thicken the sauce. And get this, you can refrigerate my Vegan Alfredo Sauce overnight and it becomes a thicker, richer, creamier snack dip! After refrigerating you use it as a tasty dip for potato chips, use it as a sandwich spread, a salad topping and whatever comes to mind! 5 people have taste tested my Vegan Alfredo Sauce and all loved it and even took some with them to share with people they know! I typed the recipe instructions up and I'm going to have it copyrighted before any attempts to market my Vegan Alfredo Sauce! I did complete a video tutorial on how to make my Vegan Pasta Sauce but going to wait and see if there may be an interest after some local self promoting. If all goes well, I'm trashing my video tutorial! Not letting my secret recipe escape my lips! 😄 2020 was a horrible year for most everyone but 2021 might be looking up!

Thats my blender!!! 😄 i have the same ome, originslky i wanted Vitamix cus i know it makes amazing ize cream and in ngeneral turns anything to luree with ease..and leaves no limps etc. And all the famous healthy vegan and non vegan vloggers use it... BUT its super expensive so i had to just get satisfied with the Ninja one... :( well it doesnt turn fruit into ice cream, it leaves lumps especially if u put berries with tiny seeds like blackberries... also it leaves whole unblended picecs of spinach and kale no matter how long u blend it, it actually completely stops and blocks the blender blades if you put greens inside for some reason... i guess they get tangled around or something... Also oranges are a no no since they have this underskin layer after u peel them...like transparent scales ...so it also blocks the blender..!!! So next time ..its Vitamix for me! 😄
