EGG BITES
Egg Bites is an easy snack recipe loaded with veggies. You can have this as breakfast as well as snacks.

Ingredients
Egg - 4 nos.
Salt - 3/4 tsp
Pepper - 1/2 tsp
Onion - 1 no. (finely chopped)
Tomato - 1 no. (finely chopped)
Green chili - 1 no. (optional)
Carrot (grated)
Cabbage (grated)
Coriander leaves (chopped)
Oil
Method
1. In a mixing bowl crack open the eggs and season with salt and pepper.
2. Whisk the eggs gently.
3. Now add the finely chopped onion, finely chopped tomato, chopped green chili (optional), finely grated carrot, finely grated cabbage, chopped coriander leaves and mix it well.
4. For Egg bites, take a Unniyappa Chatti/Paniyaram Pan/kallu. Add oil and coat it well.
5. Pour the egg mix fill it 3/4th. Cook it on medium flame.
6. Once it cooked on side flip it over and cook on other side.
7. After the bites are cooked on both sides, remove them & serve hot.
EGG KALAKI
Kalaki is a famous egg special in Tamil Nadu. It is very simple yet amazingly tasty recipe.

Ingredients
Egg - 2 nos.
Salt to taste
Pepper - a pinch
Chili powder - a pinch
Oil - 2 tsp
Method
1. Beat two eggs in a bowl
2. Season it with salt, pepper and chili powder
3. Heat a pan and add some oil
4. Make sure the pan is very hot and add the eggs
5. As soon as you pour the eggs, start folding the edges inwards
6. You have to be quick to ensure that the inside stays soft and not fully cooked
7. Fold it from all the sides and when the eggs come to a single form, transfer them immediately.
8. Your ‘Kalaki’ is ready to be served.
9. ‘Kalaki’ can be had as it is or can be had as a side to any dish.
Notes
You can skip the chili powder if you prefer less spiciness.
Do not let the eggs sit in the pan for too long as that may overcook them.
KARANDI OMLETTE
This Karandi Omelette is made in a small tempering kadai and it tastes perfect.

Ingredients
Chopped Onions
Chopped Green Chili
Chopped Coriander leaves
Chili powder - 1/4 tsp
Turmeric powder - a pinch
Pepper - 1/4 tsp
Salt - 1/4 tsp
Egg - 1 no
Oil - 1 tsp
Method:
1. First, add the chopped onions to a large mixing bowl.
2. Add the chopped green chillies and coriander leaves.
3. Now, add the chilli powder, turmeric powder, pepper powder and salt to the bowl.
4. Mix all the ingredients together.
5. Now, crack open an egg and add it to the bowl.
6. Whisk it quickly.
7. Now, take a Karandi (small tempering kadai) to make the karandi omelette.
8. Once the Karandi is hot, add a little oil.
9. Pour the egg mixture into the Karandi.
10. Keep it on a low flame and cook it.
11. Once it is cooked on one side, flip it gently to the other side.
12. Cook evenly on both sides and then remove it carefully from the karandi.
13. Your Karandi Omelette is ready to be devoured! Serve hot! You can have two or three of these omelettes per head!

Method:
1. Heat oil in a pan. Break and beat the eggs.
2. Pour the egg mixture into the pan add salt, pepper powder, chili powder and cook.
3. Egg omelette is ready. Now cut into thin noodles like strips. Keep aside.
4. In the same pan heat oil. Add chopped onions, chopped garlic, chopped ginger, chopped green chili, chopped capsicum (optional) and chopped tomatoes.
5. Saute the onion till it turns transparent.
6. Then add salt, turmeric powder, chili powder, pepper powder and saute till vegetables become dry.
7. Now add the omelette strips and give it all a quick mix.
8. Garnish it with chopped coriander leaves.
9. Serve it hot for breakfast or snacks.
