Ms. Anita; I don't know if you realize this but your doing a great service to so many of us folks. I'm a widower and my wife did the indoor meals and I was the grill master, or maybe just the griller. Well today I bought some bone in chicken thighs and didn't know what Temperature, or Time parameters or whatever. Well you solved that dilemma. Thank you.

I absolutely LOVE roasted/baked chicken thighs! So Thank you Anita for doing this recipe. I particularly love how you used the kitchen shears to clean up all that fat on the chicken. The drying technique you used was great, but I like to go a step farther here. Once I seasoned my chicken, under the skin and out I like to put my chicken on a wire rack, on a baking sheet, in the refrigerator for an hour or so. I also cook it that way so the chicken won't cook in its own grease. I avoid adding any liquid to the now dry skin like olive oil, but if I do, I use like an olive oil spray. This makes sure you have very crispy skin. AWESOME JOB ANITA! Thanks again!

I just want to say thank you for this...I always avoided baking chicken bc it always came out dry. I use this recipe now almost every other week. You've saved me so much time and energy w my meal prepping.

Tried the Old Bay and the recipe turned out poorly. Far too much salt in Old Bay and the dish was almost inedible

I tried this recipe two days ago and I have to admit I was pleasantly surprised. The thighs did come out really well. The trick though is to make sure you do not overcook so that you can have the juicy, tender taste. Nothing is as discouraging as over-baked chicken. Like others have commented below, I love the skin and never cut any of it before baking. :) The other thing I must mention is that I had never thought of rubbing the spices under the skin. This is very clever! It works well with thighs because the skin is very loose. I wish the skin around drumsticks was as loose. I would love to try this method with drumsticks. Thanks for sharing the recipe.

I tried this last night and it was absolutely delicious. I find the thighs are the best part of chicken. As you said they are flavorful, tender and CHEAP !!! The skin was crispy and the seasoning was just right. I made a similar Teriyaki marinade and it was good but not as good as your receipe. Hats off to you. CB

The least expensive chicken for me is chicken quarters. The supermarkets I access regularly will one of them, every couple of months, have a special for chicken quarters for 99 cents a pound(!!!). When that happens, I stock up a three month supply. I helps to have a chest freezer. I repackage them into sizes appropriate to one days cooking and store for the long term. I spice them somewhat more liberally using salt, pepper, garlic and onion powder and copious amounts of curry. I do this in a bowl making sure that every surface is doused, then let them marinate in the spice for an hour or two before cooking. Hitherto, I have not bothered with the olive oil. The skin gets 'very' crispy, but I like it that way. I have found that 35 minutes at 400 degrees, turn them over and bake for another ten minutes does the trick just fine in my over. I really shouldn't be watching cooking videos while on day three of a water fast... ;-)

On dark meat I never trim skin or fat off, everyone love those chicken skin chips(low carb). I love baked chicken thighs and definitely going to try this recipe tonight.

I don't know what kind of oven you're using, but I put mine at 475 degrees and it looked as if I was burning the house down within 10 minutes. 475 degrees is way too high. Preheated at 400 degrees would do just fine.

@@AnitaCooks so what is the exact measurements on the spices? I used a teaspoon of each, except for the paprika I used half of each. Its good. It was skinless chicke. So ne t time I will use chicken with the skin. Thx for the recipe

I dont dont comment much but I love thighs and love them made everyway. This recipe I picked up trying to make a quick meal for the kids but still had some flavor. It came out better then expected with lots of flavor and cooked perfectly when I made the recipe to the T. Was very quick to prepare and cook and is now a favorite with the kids for me to make again. Question: The skin on my chicken had peeled back off of the chicken and was burned to a crisp lol. Did I just cook it too long or what? Maybe I trimmed too much skin off

If too much skin is trimmed off, it’ll shrink and tend to burn, that was probably it 😀

Is it the temperature the same for boneless chicken thighs? Can I use butter instead of olive oil?

Carolina Howard rule of thumb for boneless thighs you always want to add 10 minutes of baking time in comparison to bone-in chicken thighs for any recipe. Bake at the 475 temperature for an extra 10 minutes and you will have great boneless thighs. I make them at least 10 times a month. I would also recommend adding 1 tablespoon of Italian seasoning. For the butter I would really stick to the oil. It’s a hassle to use spreadable butter without moving around/pulling the spices off the skin. A lot of tiny pieces of butter may work better as they will melt and spread out naturally as the chicken bakes. Just make sure, especially with oil, you restrict whatever fat you use to the skin only. A small amount is all that is needed like Anita says. Enjoy!!

every time I make chicken comes out bland I can put tons of adobo oregano excetera and it just doesn't have good flavoring at all I'm going to try your spices hope it works

I can never find any thighs( except for skinless & boneless) at the grocery store....The skin & bone help make them tender.....

Yes, it’s hard to find bone-in, skin-on thighs. I had to go to a price club and get a huge pack 😀

You could ask someone in the meat department. Most supermarkets have a walk up window.

It is a great way to prepare them but for me, i'll use bone in and skin OFF, i eat my chicken as lean as possible (for my husband and i) but thanks for sharing !
