Crispy Cajun Potatoes is a crispy and creamy #PotatoStarter. In this #CrispyCajunPotatoes, baby potatoes are fried till crispy and a rich creamy mayonnaise-based sauce is poured over. Crispy Cajun Potatoes Recipe:
Baby Potatoes - 20 nos
Salt - 1 tsp
Water - 1 Cup
Corn Starch - ¼ Cup
Oil - For Frying
For The Sauce:
Mayonnaise - ½ Cup
Red Chilli Powder - ½ tsp
Black Pepper Powder - ¼ tsp
Dried Oregano - ½ tsp
Dried Parsely - ½ tsp
Dried Thyme - ½ tsp
Garlic (minced) - 1 tsp
Onion (finely chopped) - 2 tbsp
Coriander Leaves (finely chopped) - 2 tbsp
Salt - ½ tsp
Cooking Instructions:
1. Pressure cook the potatoes for 2 whistles with a cup of water and a tsp of salt.
2. Strain and smash them with the skin-on.
3. Coat them with corn starch and deep fry for a minute. Strain out of the oil and after a minute again fry them until crispy and golden brown.
4. Mix all the ingredients for the sauce in a bowl until well combined.
5. Pour over the fried potatoes and then garnish with chopped coriander leaves.
Cooking Tips:
1. Double frying the potatoes maintains the crispiness.
