Pro Tip: Drop in half a teaspoon of baking soda while boiling potatoes. It breaks down the pectin and increases surface area of potato hence extra crispiness

And a pro tip from me also.... Add 2 tsp of NaCl while frying the potatos as the electronegativity of Cl- will increase the extent of Hydrogen bonding of the potatos with the slurry and also will increase the boiling point of it and so does the surface area of the molecules of the potatos....
