Recipe in Detail:
Hummus:
Boiled Chickpeas 1 & 1/2 cup
Salt 1 tsp
Garlic paste 1 tsp
Sesame seeds 1/2 cup (dry roast on low flame until fragrant & let it cool)
Lemon juice 2 tbsp
Olive oil 3/4 cup
-In a blender jug, add all these ingredients & blend well until creamy consistency (Scrape the jug in between).
-Add some water if needed.
-Hummus is ready. Garnish it some olive oil, paprika powder & black olives.
Falafel:
Chickpeas 2 cups (Soaked overnight)
Onion 1 large
Green onion 1 cup
Green Coriander 1 cup
Black pepper 2 tsp
Salt 1.5 tsp
Garlic paste 1 tsp
Baking soda 1/2 tsp
Paprika Powder 1 tsp
Lemon juice 2 tbsp
Green chilli 3-4
Dried Parsley 1 tsp
Coriander powder 1 tsp
Cumin powder 1/2 tsp
-Mix all these ingredients & chop well in a chopper (Scrape the chopper walls in between).
-Add 2 tbsp all purpose flour (maida) & again mix it well.
-Take some quantity of this mixture, make a ball, press gently & shape them.
-Make 20-22 falafels from aforementioned mixture (about 40g each).
-Deep fry the falafel on medium flame.
-Serve the Falafel with Tortilla wraps, Hummus and Salad of your choice.
*I use the Salad of Lettuce with salt, black pepper, garlic (crushed) & lemon juice.
