Crispy Teriyaki tofu with Chinese pancake and plum sauce 250g firm Tofu for the teriyaki sauce 1/2 thumb sized piece of Ginger 1 clove Garlic 1/2 red chilli Chilli 1/2 stalk Lemongrass 5 tbsp Tamari 3 tbsp Maple syrup 2 tbsp water 1 pak choi 4 tbsp water 2 tbsp sesame seeds raw veg to serve Scallions Carrot chinese pancake 1x 8oz cup of white flour 1.5 x 8oz cup of water large pinch salt 3 tbsp ground flax seeds plum sauce 4 ripe plums 1/2 chopped onion 2 tbsp apple cider vinegar 5 tbsp maple syrup 3 tbsp soy sauce/ tamari 1/2 thumb sized piece of ginger 1 clove 1/4 tsp cinnamon 1/2 tsp fennel ground or seeds 1/4 tsp all spice 1/2 tsp black pepper pinch salt

The Happy Pear we recently moved our household of three boys under 7 from a meat heavy carnivorous diet to a plant based diet and have struggled at times to find a meal that the kids gobble up...we used the stirfried tofu above in vietnamese ricepaper rolls that we all made at the table with rice noodles, salad veg, and a veganfied dipping sauce....it was amazing! The meat loving Kids gobbled them and it made such a fun dinner. Thank you!

Meat eater trying to get healthy here. I joined a vegan group to try to help me find recipes and good tasting food, but all they did was eat salads and processed vegetarian foods. Looks delicious, but I'd replace all the cooking oil with coconut oil due to its stability, but I think I would have used a fair bit less. Also I'd swap out the flax seeds for some psyllium husks as again you really don't want to fry polyunsaturated fats.

I'm watching this as I am prepping my sweet potato chili for the next 3 days. I want tofu now. You have two of my favorite foods Tofu and Bok Choy. I am trying this after the beach tomorrow. I have everything on hand except the plums and the lemongrass. I know I can get the plum, but lemongrass I cannot find. Any suggestions on a subsitute.

Kenneth Felipe I have the same problem. Google says the zest of one lemon = 2 stalks of lemon grass. It also says add a bit of arugula to get the bitter note of lemon grass.

Kenneth Felipe Try looking where the tubes of herbs are in the refrigerated fresh herbs are. I believe I've seen a tube of lemongrass there. Hope this helps!🤝

Probably! Use whatever flour you'd usually use to make gluten free recipes :) the pancakes might fall apart a bit though

I made the pancakes with 1/3 buckwheat flour and the rest my usual gluten-free white flour mix. You could just put all white flour mix but I like a bit of buckwheat for its nutritional value and I think it makes the pancakes a bit more robust. I added an extra tsp of ground flax & a about another 10 mls of water, left the mix in the fridge overnight as GF flours take longer to absorb the fluid and oils. The result truly exceeded my expectations- hubby who is not a gluten dodger was well impressed. Will definitely make this ”foodgasmic”combo again 😁

I never saw PAC CHOIt that big. . Why did you cut the centre off of the very thin stalk . I never saw it like the one you used. Usually . It is crunchy & moist & the leaf would be the last to cook. Awesome recipe and I'm about to make it tonight for the 3rd time! BTW, I have no affiliation whatsoever with this brand but have you ever considered using "SOLIDTEKNICS" for your pans? Check them out. I have bought some and they have no non-stick coating and last a lifetime. The more you use them the more non-stick they become. Sorry, I just cringe at the pans you guys use with all that smoke coming out of them haha!
