My daughter and I just made this together and it was absolutely delicious! It took us about 20 minutes or so as we weren’t in any hurry and enjoyed the cooking process, but it only took us 5 minutes to eat!

It took me 12 minutes to make this because I don’t have a twin, but it was AMAZING!!! So delicious!! I paired it with Jasmine rice. I successfully made this recipe x 6 and dehydrated it to take backpacking! It came out so good. I am taking it on my hike of the Pacific Crest Trail in 3 weeks. I purchased powdered coconut milk (coconut milk is fatty and hard to dehydrate) and added while re-hydrating...worked like a charm! Thanks! I will think of you guys each week when it’s curry night!

Just made this and it is amazing. I did add around 10 minutes to the simmering time and also added alittle cauliflower (had a quarter head) shallow fried and paper towel drained. I'm Indian myself and loved this curry! I did put a little spin on it by adding some finely chopped kaffir lime leaves (I ran out of coriander!), and it tasted amazing! it sort of turns this into a Thai-Indian hybrid :)

Krystle Nelson yeah.. you can. But unlike coriander, which is added at the end as garnish, The curry leaves would be the first thing you should add in the hot oil to allow them to splutter and fry up and season the oil.

I’ve made this several times and it’s my family’s favorite way to eat Chickpeas now. Some tweaks I made were using fresh tomato pure and boiled chick pea instead of can. Added finely chopped bell peppers and spinach (instead of cilantro) and gave more cooking time. Tasted amazing!

This made a Gorgeous curry! I had all ingredients except the fresh ginger. Also, I used normal (not lite) coconut milk. I also added one small honey-nut squash (cooked-just microwaved in bowl of water), and peas. I cooked mixed vegetable quinoa for the side. This curry is so wholesome, satisfying, and comforting...the second I tried a spoonful from the pan my body involuntarily smile...I felt like a child. If you don't add the squash or peas and make it exactly like they say, you have yourself a wholesome 5 minute, comforting curry. I'm addicted.

Love Lauren's comment! I idiosyncratily (probably not a word) avoid coconut anything but these recipes still come out brilliantly. This is boring and anecdotal but my family lived on the island of Domenica for a year while our Dad was thinking of developing an hotel; very good that he changed his mind and lobbied for it to be designated as hands off eco territory like the Galapagos, always proud of him, still missed. IF you really like coconut, there was a drink that was stellar there; fresh coconut liquid and flesh, split down the middle, ditto sugar cane and lime juice. It was really too good to be true. Also my sister and I did the world a great service by saving the lives of countless giant frogs, called locally mountain chickens, (7 and 9 yrs respectively) by following the guys up the extinct volcano and making holes in the burlap bags. We kept one, named Charlie, who ate all the insects in our house. Will never forget that year.

Just made it and ate it after a 5 day mimicking diet. It was delicious, but clearly requires more than 5 minutes. I agree with the other comment about the avocado - just not necessary. Also, 1 clove of garlic? What kind of heathens are you. I would use 4. I doubled the recipe and used 8. The coriander and lime really bring it all together. Served over a bed of rice. Delicious. I can bake but i made this today and didnt exactly have curry powder or exact veg but i used minimalists bakers curry powder recipe(didnt have mustard seed or cardamom but had mustard, ground cloves). Made this curry two days ago. I recommend trying it!! Had fresh parsley in my garden so used that instead of coriander / cilantro. Added zest of full lemon which is good. Added juice of one lemon too, instead of half, could pick up citrus taste too much, will stick with half the juice as instructed. Partner and I agree tastes much better eating next day, soooo much flavour! We’re going to use this recipe for a bulk cook up for frozen go-to meals. Our preference is to eat it with brown rice 🍚

Great recipe! I followed the comments and cooked this for way longer. I made it in around 40-50 mins instead and added some of a chicken broth cube. Delicious!

Just made this and it's delicious. Took about 20 minutes from popping open KZbin to finish. Very good indeed. Used lemon because I had no lime and parsley because I've never seen fresh coriander anywhere but I'll keep an eye out.

I made this last night. It was literally finger licking good. I kept going back to the kitchen and running my finger along the side of the pan etc.Trying to scoop up that last little morsel. I'll definitely be making it again....lots!! Thanks!

Tried this. i only had curry powder, garlic, thyme and parsley, so thats what i used. I also kicthen sinked it and added the rest of all my veggies to the chickpeas. It was still amazing and all my roommates finished it that night. I can only imagine how good it is the right way

Look, of course it taste better if you slow it down but if you are in a rush this works. I tried it and it was delish straight away but overnight the flavors really married and it was so much better. I use their recipe template as a base but if I also add whatever veggies I have on hand like carrots, cauliflower, and celery. If you garnish with extra lime as you are serving this dish is EXTRA! Thanks for sharing guys!!!

I have been making chickpea curry for a long time before I stumbled across this video. I just use 1 jar of Thai Red Curry paste and 1 jar of Thai Green Curry paste mixed with 2 cans (about 15oz each) Coconut Milk.. then I add the Chickpeas. I also like to add torn up spinach. Serve with rice that I already made in a rice cooker, DONE! :)

Made this tonight and it was GREAT! Thanks so much for sharing this quick and simple recipe. This served 2 people just fine! The prep work is easier with two people for sure, but still, as a novice recipe follower, I got this done fast and enjoyed the result. A keeper for sure!

For a lot of westerners curry powder = indian flavours. Its a British invention. There is a funny story... I was invited for dinner at aquintices's place and she happily told me that I will be very happy as she cooked an indian food for me. And actually she made some coconut curry with half tea spoon of curry powder 😅.
