I add a tablespoon of powdered ginger to the corn starch.... really brings that ginger flavour through nicely.

It absolutely BLEW my mind when I moved away from Calgary and came to find that no one else does ginger beef. I always thought it was a staple of chinese take-out and turns out I was just wrong lol

It's all over western Canada but eastern Canada hasn't clued in yet. I always tell my friends here in Ontario that not finding ginger beef in a Chinese food restaurant feels like to going to a Mexican place that has never heard of Tacos!

Canada has its own version of Chinese food. I was disappointed when I moved to the USA. The fried rice has no flavour in comparison to the Canadian version. Lots of oyster sauce and five spice compared to American that just used soy sauce. The Chinese in Canada have been good to us.

Wow finally you put the pieces together. I grew up in Calgary and always loved this dish. Then I moved to Toronto where it is very hard to find a proper crispy ginger beef. Some restaurants have not even heard of it or try to serve you something else entirely. Thank you will attempt this soon, but might add some dried chillies.

Cuz ginger beef is not a Chinese dish. It’s hard to find it in a big city with lots of Chinese residents.

@@elizabethlee8271 Vancouver has more Chinese residents per capita than perhaps any single city outside of China and it’s a super common dish to find there. Montréal and Toronto just have lousy westernized Chinese restaurants

Just made this for my wife. It was a completely new dish to me. I substituted malt vinegar for the rice vinegar, and orange juice for the rice wine. It was delicious, all I had hoped for. Thanks for sharing.

Dragon lotus in Peachland BC makes very good ginger beef! Old Yans Kitchen (90s) in Salmon Arm BC made amazing ginger beef!! Dragon Lotus is closest to Yans that I’ve tasted!

This recipe brought me back long years ago when I was in Calgary during 1993-1994. I can't find ginger beef menu in any other counties. l was so lucky have had tried this menu, so delicious...☺️👍👍

I cooked this tonight, and was concerned about the cornstarch coming off in the oil, which it did, so with the second batch I didn't stir it around like in the video - that helped out, so I put the first batch back in and left it alone until it was crispy and cooked - all was great. I also substituted the rice vinegar with apple cider vinegar and omitted the wine - delicious, thank you for the recipe.

Add half a beaten egg to the beef and then the flour to coat the beef first. Then add the beef to a plate with cornstarch and make sure each beef strip is coated well. Then you can deep fry and the coating won't come off.

Other recipes make a batter with eggs, water and cornstarch, but here the beef is just coated in corn starch. Which is preferable/will get a crispier beef while keeping the beef tender?

The best ginger beef I’ve had is from chongqing Szechuan restaurant in Vancouver. No one’s versions have held up to theirs. I will try yours but I’m skeptic. But thanks for sharing.

I had Ginger Beef in a Calgary restaurant back in 1983. It was fantastic! As I live in the Vancouver area, I have been searching for a place that does this dish justice. Found a few that are close, but haven't found one as good as the Calgary experience. You dish looks good and I will try to make it soon. One comment - I remember it as being much dryer that what you show here, about half the amount of sauce so that the beef remains crispy.

Hmm interesting. On the streets in Kuala Lumpur, Malaysia's Jalan Alor, the Chinese stalls had a dish called Ginger onion scallion beef/chicken. They would usually make a sauce from juice of grated ginger, oyster sauce, chicken stock powder and MSG. They would stir fry proteins, onions and scallions and finish it off in a delicious, gingery umami sauce. It sort of reminds of a less oily version of this dish.

Rice vinegar and rice wine are both made from fermented rice, but they are different products. Rice vinegar is a type of cooking vinegar, whereas rice wine is a type of cooking wine.

Good recipe, needed a bit of salt and I added some broccoli into the mix. Double fried the beef in peanut oil for that extra crispy juicy bites.

Zhōu yǔ Qiáo As a chef u can use rice, make ur own fried mixed veg and noodles. I worked for an oriental chef. He showed me how to make it. If u have an oriental part of town they have wonderful food products u can do at home. Just follow good recipes as this young lady shows. Cheers.

I believe the first restaurant which featured Ginger Beef in Calgary was the Yum Yum Tree on 14th ave. SW.(I might be wrong, I don't live in Calgary) I had ginger beef several times at that restaurant. It felt about as authentic as it gets, as in we were the only non-east-Asians in the place, and a large part of the menu was unavailable to us because it was only listed in Chinese writing. What the waiter said when I asked him about those items, was, "If you can read it, you can order it". LOL

Ordered from ginger beef express on Macleod Trail. Overly priced, small amounts and bland. Very disappointing. Golden Gate is better. Unfortunately they r closed on Tuesdays now. Never will buy from ginger beef express again. For 120$ it was a serious let down.
