This is the third of your recipes that you've taught me, John, and I am so appreciative. With each bake I am becoming better at it and growing in confidence. When I go to cook, which is several times a week, I pull up your videos, hit play and go back and forth from my kitchen to living room, ensuring that I am doing what you are doing. That I follow the ingredients and directions to the "T." Truly, I have learned a new skill. As to your sandwich, I made that for my wife last week and she said it was the best sandwich that she had ever tasted. It was off the charts good. Thank you so much. All your instructions are perfect. Today is the first time I have successfully completed a baguette. My gas oven was a bit weak so I had to increase the baking temperature to 450 degrees Fahrenheit and bake for 10 minutes. In the past, many KZbinrs gave incorrect instructions on making baguettes; so I had to throw away a lot of ingredients, especially wasting too much time. Once again, I sincerely thank you for your detailed and precise baking instructions. I wish you and your family good health and happiness. I baked two loaves of baguettes.

Dear John, you must be the best teacher on KZbin. I’ve been making your bread recipes for the family with huge success - the cottage loaf, the crispy rolls, the bloomer... I did your baguettes last week, and family was over the moon. Could you do a plaited bread for us? Also, is there any seeded bread that I could make which doesn’t need the wok? John Kirkwood is good, bloody good. No question about that. This selling stuff on KZbin isn't new, nor is it something only John does. I've been learning from his videos even before he has been asked to endorse or sell stuff. In fact, in his French Baguette video, he actually says a cloth with flour sprinkled on it, as a a couche is better, and a lot cheaper than a mould, which here uses here. What's wrong with doing that? He still concentrates on the recipe. All through. The shower cap is another example. He still calls it a shower cap, he's always used it instead of anything else. John Kirkwood is kosher, and bloody good.

John, thank you! I have been on the quest for the elusive crispy crust baguette here at my altitude of 1830 meters. Baking is challenging! I got a lot out of how you form and score the loaves. Had to laugh when I saw you and I have the exact same equipment..red mixer, baguette baking pan, and scrapers. I am an American who lived in Europe many years and after I came home, I totally converted to the metric system, and cooking by weight. It really helps. I love your cooker!

Follow-up: I’ve made these four or five times now, and each time gets easier and with a better result. I asked my son to help set up the ingredients, showing him the list in the video… He said, why not print the recipe out and stick it on the fridge? So I did. Ok, I'm back after a year, just to say, how much I have been enjoying this recipe. I make these baguettes at least once a week, sometimes more. If we have extra, we share with an older couple across the street from us. I've also tried some slight adjustments, I add a teaspoon of garlic powder and a tablespoon of Italian mixed herbs to the flour before mixing, that makes an amazing aroma and an amazing loaf of bread.

Being a Yank from Philadelphia, the quest for a proper home-make baguette has been eternal - this is the actual solution. Thank you. Oh. Side note. We switched to grams a few years ago, when I started baking continuously and as a proper hobby. You’re absolutely spot on. Grams are better. This also works with a bread machine, on a pizza setting to pull it all together, when it’s done, it’s kneaded and proved.

Just made a batch this afternoon. Instead of 4 oversized loaves, I split the dough into 6 loaves, added an egg wash to them and sprinkled pretzel salt and roasted garlic before baking. Turned out absolutely wonderful…crispy outside, soft inside. Great recipe John.

Great recipe John. I made these with Canadian strong white bread flour and they were absolutely lovely. So soft inside with a lovely crispy crust. The effort you go to to describe the detail of the bake is really impressive. Thanks for that 👍

Great instructions, easy to follow - and I got an OK result from my first attempt. But the baking took a long time, 26 minutes or more at 200C to get colour on the crust and hard bases on the subs - next time I'll try fan cooking rather than conventional baking. And before then, time to buy a baguette tray!

I give my yeast honey. Its a nice flavour and the yeast goes nuts. I also use fresh yeast, I absolutely love it and although it's not necessary, I like the smell. You can get it from supermarket bakers just by asking, or small grocer shops etc. You can even keep it going like sourdough and have infinite yeast Love johns recipes they're so easy to follow. Thank you for this great video, everything was clear & well explained and so easy to follow, and I especially love the inclusion of grams for every ingredient. This high quality, and the fact you seem to try and reply to every comment you are able to even months later, speaks volumes about your passion & dedication to your craft and sharing it with others. I made an attempt at making rolls based these yesterday, aside from some custard filled buns early in the year this was my first time ever baking any kind of bread. Since I have to watch my blood sugar I swapped out the refined white flour for 50% wholegrain white flour and 50% wholegrain spelt flour, the rolls came out denser and smaller in girth than I was hoping but otherwise still usable and very tasty. I did adjust the amount water with an extra 100-150 ml (not exactly sure how much since I only thought to add it after I started mixing the dough), I'm not sure if this is an appropriate hydration ratio for wholegrain and spelt flour but the dough seemed to come out good after 10 minutes in the mixer. The packets of yeast I had on hand were also on the older side, were best before April 2021, so I added a bit more of it (and sugar) to compensate which seemed to proof alright and the dough had risen good after 60 minutes of sitting in the oven with the light on though I did leave it rise for an extra 15 minutes before taking it out. The shaping went smooth, unfortunately after letting rise on the bench for 45 minutes they hadn't risen much at all (the kitchen had cooled off due to air conditioner in the adjacent lounge room to combat a hot Australian summer day) and even another 15 or so minutes in the oven under the light didn't help too much. Speaking of the oven I believe I had the temperature set too high during the baking, I had to set it to 200 C but forgot to adjust due to being a fan-forced oven. All in all I am happy with my results, like I said they're still tasty and good to eat despite being denser and smaller than I wanted and the best part is they didn't spike my blood sugar. I'll definitely have to do some more research and experimentation with using 100% wholegrain flours and incorporating spelt, already looking at your "100% whole wheat sandwich rolls" as my next test. Again thanks for the wonderful video!

Just experiment by adding a few grains Wolfi, it's not going to ruin anything, just keep the rest of recipe the same, start with a 100g as a test. just mix them in at the start with the flour. if it doesn't work it's not the end of the world, just a few ingredients and bit of time. I'd just like to thank you for these videos chief, I have an autism spectrum disorder and I've found the recent trend in online cookery towards "just feel it out maaaan, just use whatever, who even measures stuff anymore, just keep a pantry with 5000 things in it and pull stuff out at random when you're feeling feisty" nonsense incredibly frustrating - straightforward actual-recipes with proper amounts for all the ingredients and clearly showing what you mean when you say something is, alas, rarer than it should be.

Thank you for this video! I watched a bunch of different baguette-making videos before I chose yours to follow. You provide such clear and easy instructions to follow and your voice is very easy to listen to. I followed this recipe to the T and they came out well but on the white side. It could be from over steaming and lowering the temp (I have a convection oven and didn't want to burn) but I am excited to try again. My 10 year old loved the bread and she's a tough critic! :) Thanks again!

* l'm pretty sure his oven is convection also. Begin watching at 12:30 and watch for the steam to blast out - in the back of the oven you can see the fan. I have a convection oven also and did not have any issues ( I'm making these for the second time while replying to your comment. Oh, the agony of waiting for the proofing). I say trust but verify the oven. Don't walk away, trust your nose and use the light function to peek in without opening the door. You are right on all accounts about his video! Right then😁

I have never seen someone turning their bread over in the oven to crisp the bottom. This is very good for home ovens. Brilliant! Subscribed!

I’ve been trying to make bread in a bread machine which wasn’t very good. When I watched your farmhouse loaf video and followed your instructions the bread came out awesome. The simple thing of you explaining about the yeast made such a difference. Fantastic videos. For the baguette can I half the recipe as I don’t think I can eat 4, as much as I’d love to.

Thanks for watching, much appreciated. It's not ideal halving these already small recipes, but if you must, half everything except the yeast, keep that the same, but it's much better to bake all 4 and freeze 2.

12:34 Illustrated here but not verbally mentioned, It is important to keep in mind that a lot of hot steam will come out of the oven as you open it after it baked with water inside like that. People should keep their face away and open it a little for a bit and let the steam out first before fully opening it.
