The sausage is seasoned with various spices such as paprika, garlic, and pepper, cold-smoked multiple times, and then air-dried to give it an intense aroma.
Ingredients:
3 kg pork neck
6 kg lean pork
1 kg firm pork back fat
150 g sweet paprika powder
150 g hot paprika powder
100 g freshly squeezed garlic
10 g pepper
200 g curing salt with nitrite
Approximately 4.5 meters natural casing, caliber 55/60
